Now that mobile ordering is everywhere and so much more convenient, I found that I only used cash for tipping. Bell services, mousekeeping, Sunshine Flyer, etc. I used to bring about $2K in cash. Our last trip, I brought about $500 and most of it came home with me.
There really isn't much that you can only pay cash for. I'm always going to have $700 or so with me in cash....you never know when electronic payment is going to go down. I probably only walk around with $100....I leave the rest in the safe.
Also, for me....I have a US$ account that I transfer money into every week. It's something I've been doing for many years. So I have the cash to use anyway.
My wife and I generally have about $100 US each on hand; keep it with our passports at home. While travelling if we start running low we stop at the nearest TD bank or TD bank machine and top up again. TD is readily available in Florida and the North East and there are no fees for TD Canada customers.
We use very little cash while travelling in the US. Small incidentals, tipping, that sort of thing as others mention. For everything else, it's MasterCard.
Depends - if I’m driving down I bring more cash, seems like some stations give a better price to cash paying customers.
If I’m flying down then we probably keep $100 usd per day on hand, max of $500 usd. Just in case systems go down or we get a craving for good Chinese food and there’s a cash discount offered.

Now that there's no Magical Express, I don't need driver tips. All food/merch purchases are made with Magic Band, and the only time I've seen mobile units go down was at Epcot booths during torrential rain/lightning, at which time we bailed on the park anyway The only thing I need cash for now is tipping MouseKeeping, and since we're DVC and only get towel/trash service, I'm not as generous as I used to be.
I suppose there could always be that "worst case scenario" where you're stranded and need cash, but it hasn't happened to us since we started going as adults in 2015
I just went for 12 days and brought $0.00. I used no cash. All Apple Pay or credit card. (Disney restaurants really need to get up to speed! Some of Disney Springs have handheld devices now - I was shocked!)
