land at airport at noon, check in at AKL. Will we be able to make dinner by four at Disney springs?

It might be tight if your plane is delayed in anyway or your room isn't ready when you check in. It's about a 15 bus ride from AKL to DS. Then walk to your ressie.
As long as you can check in and get on the bus or grab a ride to DS by no later than 3, you'll probably make it.

It could be tight in my opinion. I never make an ADR sooner than 5 hours after scheduled arrival. Travel day is wrought with uncontrollable delays.
How are you getting from MCO to AKL?
If you are using DME the average time is 90 minutes from arriving at your gate to your hotel. Then you have to check in and either go to your room and drop off your Carry Ons or go to Bell Services and arrange for your luggage to be stored. Then you need to wait for a bus to Disney Springs, which may be awhile at that time of day. The Disney Springs bus stop is in the center of the area now, so it is possible it may take awhile to walk to the restaurant of choice.
Good Luck

Yes, I think you would be fine.

I know they tell you 90 minutes for DME but we've usually done it in 60.

Even if you're running a little slow, the place to check in luggage is near the drop off point and you can quickly drop and run.

I find buses better (timing wise) at AKL too.

I'd do it.

We arrive tomorrow at 8:30am and are staying at All-Star Movies for the first part of our trip and have a 12:30pm lunch at Skipper Canteen...I'm good with it and I think we'll be fine.

I think you can make it. Last month, we arrived at AKL about 2 hours after we landed and we had a to wait a while for a DME bus. Luckily our room was ready but even if it wasn't we could have checked bags with bell services and gotten on the bus to DS.

We usually don't plan a meal less than 4 hours after arrival so you should be fine...as long as there are no weather or travel delays.

For most restaurants in DS make the reservation through Open Table or the restaurant directly instead of the Disney Dining res system. If you are not able to make the reservaion you can either cancel or re-schedule without the no show penalty.
