how many per room?

The majority of the rooms at Universal sleep 5, although, there are a few, such as the king suite at RPR that only sleep 3.

That said, although they say max occupancy of 5, there usually is only bedding for 4. You would either need to rent a rollaway or bring an aerobed or mattress.
 

All queen bedded rooms at HRH, RPR and PBH sleep 5. The King bedded rooms sleep 3. The deluxe rooms at HRH have a sleeper sofa and so do the deluxe rooms at PBH. The rest of the non suite rooms like goofy said you would need another bed for the 5th.
