Is there a limit on the number of bags that I can have with me when I embark? I want to take a backpack, rollon bag and a large mesh bag with scuba kit with me.

As long as they fit though an airport style x-ray machine, you can take them with you. Keep in mind you will have to keep them in your possession until staterooms are ready.
It's a real pain to have a lot of stuff with you, Cabanas/restaurants are crowded on embarkation day and the elevators are super packed. I don't even like having my backpack with me most of the time.

I agree. I usually try to leave a bit of space in our suitcase so we can have our backpacks on the plane but put them inside our suitcase when we drop them off with the porters. Between the two of us, we usually walk on with one backpack or, if we can swing it, one drawstring bag.
That being said, we don't worry about having our swimsuits, etc. We also don't have any medications that we want to keep with us. So, it's mostly based on if we have our laptop/iPad, etc. and how we're feeling about hanging on to them or burying them inbetween all the clothes in the suitcase for protection.
