yes it is a pickle question day...

I like the kosher dill pickles. It seems they have a bit of cucumber taste when I first open the jar but more pickle taste throughout the pickle towards the end of the jar which could be as much as three months or more later.

when we made pickles with those little bitty cukes from our garden ......we did some with dill and garlic.......these were so tasty ....we did wait for two weeks before sampling them and then we had them thru out the winter too.....delicious..
We have tried some that were in jars for a year and they did get spongey

The recipe I use is 14 days also. I can't say I've ever noticed a difference in how 'pickled' they are over time.

I never thought about pickles continuing to pickle while in the jar. I too like the crunchy ones best.

Its always been a huge treat for my kids to go to the deli and get one of the big pickles from the deli... I  dill pickles....

North of chicago there was a restauant called belden's and they had bowls of pickles on the table. It was kind of popular back in the day at many restaurants, some have told me.

so if it is wuick like 14 days then maybe they do age somewhat over a few more months.
thanks,

Mikeeee
