How long does homemade vinaigrette last?

I googled this to find answers ranging from 3-4 days to "forever". I read that using garlic or onion will make it last for less time than just oil/vinegar/herbs, but what about fresh jalapenos?

Does anyone here have experience with making homemade vinaigrette and can comment on how long it keeps for? I am planning on making a jalapeno-cilantro one.

Total guess here but ...years? If you're using it withing the next few months, I'd say you're golden.

I can't say I've ever had a vinaigrette go bad.

if you are using fresh-not preserved jalepeno's it will last no longer than the jalapeno's would last stored in the refrig-maybe a week. while the oil and vingar themselves do not spoil there is not enough acid in a vinegrette to act as a preservative for those ingredients-like garlic, onion and jalepeno's that will spoil.

I found this out when the garlic in a vinaigrette I made became moldy in about 5 days. I now make just enough for 1-2 days.

If you are going to use garlic I found that leving it whole or large pieces works much better for long lasting.

Hm. I put a little bit of minced garlic in my balsamic vinaigrette, along with at least 10% shallot, and it lasts for months in the fridge.

i've never done the homemade oil but wine & vinegar with garlic and herbs last forever.I pour the wine vinegar and a little fresh olive oil right on the salad greens before serving

I don't refrigerate the homemade wine vinegar

Thanks for all the replies. It is funny how different they still are lol. I guess it depends on a lot of different things. Now, if I saw mold, I'd obviously ditch it, but if there's no mold and it tastes the same, do you think it would be fine? Or are there other signs to look for? I just made it today, so I am sure it is good now, just want to know what to look for.
