How GFCF friendly is Disney's Vero Beach?

We will be staying at Disney's Vero Beach Resort this summer. We will have a full kitchen, so I will be making lots of meals myself. I have two boys who are on the GFCF diet. But I was wondering if anyone knows how accommodating the restaurants there are? I know WDW is wonderful in making meals that are gluten and dairy free. But I don't know how it will be at Vero Beach Resort. I don't want to have to make all the meals myself. I am on vacation too!
Any info. would be great!
I was also wondering if anyone knows of a Whole Foods type store in the Vero Beach area? I will be flying into Orlando and then driving to Vero for a week, then off to WDW for a week.

We shopped at Publix when we went and ate at the resort the entire week (either onsite rest or cooking in). Don't know how accomodating they are to the GFCF diet, but they sure went out of their way to accommodate my husband's low carb diet and my son's general picky eating with everything needing to be prepared just right. Lots of substitutions were allowed.

This is a great place to relax and they have wonderful employees for the kid's programs. My kids continually ask to go back.
