How far SHOULD you book FP+ for rides?

So tomorrow is my 60 day window, and I'm a first timer with FP+ (but not first-timer in general).

I have a tentative plan for which park we'll do which day, but that might change once we get there. We don't like to be super scheduled, but know that some planning is necessary with the new system.

If I book all my FP+ now, can I easily change them later?

How likely is it to get FP+ for the E-ticket rides the day before you go to that park?

For example, if I planned on doing magic kingdom on tuesday, but monday evening, we decide we want to do Epcot on Tuesday instead. Can I use my phone app monday night and get my party of four FP+ for Soarin'? Or are the FP+ for rides like Soarin and Seven Dwarfs Mine Train, etc, actually booked solid weeks in advance? What about spots for MSEP and Wishes?

Note: not interested in character meet and greets - just rides, MSEP, and wishes.

For reference, we are there April 26 - May 2, a moderate-to-low crowd time from what I understand. The weekend days are rated a 6 on touring plans and the weekdays rated a 4-5.
 
Schedule them all...change at will. That is what I did. I scheduled park hopper FP+ which means I rope dropped for the park I was in and FP+ for park I was hopping to later. This worked GREAT for MK morning - EPCOT night.
 
Huh :scratchin I would think trying to flip your FP+ the day before would be limited? People have been booking the best rides for sixty days.
 
Get what you want now! The closer your arrival dates the harder of time you'll have

You can switch later if needed but yes it will be a slight hassle
I always book all the best stuff then work adding and dropping as it gets closer plus check all the time as things change larger group gets more chalenging as its harder to try and grab so many slots that ppl have up in order to get your whole group together

But it's best to just go and grab what you want at the60 day mark and continue to check back if you didn't get what you wanted
 

We are currently here on a last minute trip. I booked FP four days prior. At HS, I got star tours, TOT, RNR. At Epcot I got soarin and then smaller ones that don't really matter. I could no get TSMM. So there was still good stuff left.

Yes, at any time

How likely is it to get FP+ for the E-ticket rides the day before you go to that park?
For 7DMT VERY unlikely. Probably not Toy Story Midway Mania either. For the other ones, your mileage may vary. When searching to switch a fastpass, I often saw coasters and even Soarin' available for the same day, but they were often late fastpass times (7 or 8 pm.)
