How far in advance to pre-book excursions?

How far in advance can you pre-book excursions? Our cruise isn't until 6/04 (secret porthole room - woohoo!!), but it's never too early to plan!
 
It's 60 days. Works great. We did that on our Wonder cruise. If you change your mind, you must make changes, I think, no less than about a week before the cruise.
 
I called and booked 2 adults and 2 kids 4 days before we sailed on the Eastern 12-14. No problem! Trunk Bay and Butterfly Farm!! Wanted to get a better idea of the weather forecast as I believed the excursions are non-refundable if they dock at the port!
 
We just came back and realized there are several excursions not listed in the brochure they mail you, but are on the paperwork, brochure you get at the excursion desk once onboard. Now we weren't interested in them, but we didn't even know about them and this is our 4th time. They were only listed on papers there at the desk.
