How far in advance do I need to book FP+ selections?

Our window for booking fastpasses is coming up and my husband got really annoyed and frustrated at the idea that we had to know exactly where would want to be, what we would want to be doing, and what the weather would be permitting 2 months in advance. I was thinking I would just go ahead and book the fastpasses and then be able to make changes when we got there - a day or so in advance if need be. But, I'm worried that everything books up quickly like dinner reservations and that if we go to make changes the day before or something, we'll be out of luck.

What do you think? Are we going to be stuck with whatever we book unless we make changes weeks in advance?
 
I've used fp+ on two trips now and have never had a problem changing a time or attraction the day of. I believe that they hold fastpasses to be released the day of for kiosk use and changes to peoples plans. I've been on line for the bus when I realize I won't make my fastpass time and have been able to push it back to a later time. So based off of my past experiences you should have no problem changing passes around. They might seem like they are booked up but will most likely open up the day of.
 
Based on what I hear, I think Anna & Elsa are the only FP+ that books up fast. So if that is on your to do list, I think that is the only you probably should book at 60 days out.
