I know the reason behind this, but once you are actually at WDW, how does the park hopping work? When you leave one park, do you have to scan anything or keep up with your tickets in order to enter the next park? How does it know not to take off another day's admission?

With PH, your ticket is "flagged" as a park hopper. So you have unlimited access to the parks during the durtation of your visit. Let's say your ticket is a 7 day park hopper. For all seven of those days you can come and go to the parks. The ticket has a bar code on it and it is "programmed" to be a park hopper ticket. At every park you scan your ticket at the turnstiles to gain park access.

When you leave one park and go to another, all you have to do it put your ticket through like you did with the first park.

As far as taking off another day's admission, it won't. The easiest way I've been able to explain it is to think of it like how credit card transactions work...when you ring up someting with a credit card, the card will "read" the date of the transaction and that appears on your statement. With park tickets, they are able to "read" the date of your entry and it won't deduct another day's admission until it "reads" another date.
