Like the title suggests...

Current stay of 2 nights in October (at Pop Century).

Looking to split this stay into 1 night at each resort (Pop and Contemporary).

1.) Right now I can get Contemporary for 2 nights, but not 1. I guess they try to limit single night rooms?

2.) Is it possible to have my current stay at Pop Century dropped to 1 night?

3.) What would happen if I booked 2 nights at the Contemporary and then asked them to drop it to 1 night?

Any help would be great! Trying to surprise my wife for a special occasion...

You'll have to call and ask, assuming you can't do it online. Verify Contemporary is available for 2 nights but not one.

That said I wouldnt switch for one night. Look to uograde both nights. Look at POFQ, WL and Swan.

Agree with PP - you would have to call and ask if they will allow a 1-night booking if it is currently not available. I also wouldn't do 1 night in each resort. Consider CSR Tower for 2 nights as an alternative or one of Lewisc's suggestions.

I wouldn't change resorts after only 1 day, too much hassle packing/unpacking/moving/etc.

It is probably best to call Disney to see what options they can provide for your 2 night stay that are within your budget. If you change the length of stay on a current reservation, the price might also change since you just never know the various price categories and none of their online reservation systems provide that information.
