How does DDP work with Signature Dining?

So, against my better judgement, I'm considering the meal plan for our upcoming trip. As circumstances would have it, we're going to have to use at least two signature meals. For instance, I'm considering Jiko and Citico's. here's the question....
For signature meals, is it still just entree, dessert and a drink or are appetizers included? After looking at the Citrico's menu, it appears they serve a few courses...are they all included in the Signature Dining Experience?
We are 6 adults, we can put it on when we have to, our men drink beer and our ladies aren't always ladies...I'm frankly not sure Citrico's is for us.
 
On the Basic DDP, at Signatures you still only receive entrees, desserts and drinks---no appetizer is included. If you are on the Deluxe DDP, you can get the apps.
 
Given your preferences (beer for the guys, etc.) sounds like you're our sort of diners. So I would totally skip the signature dining places...there are many fine meals available on the regular dining plan that will give a much better value for your dining plan $. We just have not felt that the 2 TS places are giving you double the meal value for that 2 credits. And the signature dining experience isjust too long for us...up to 2 hours in a restaurant for the same amount of food...equaled SLOW to us, not "special". DH prefers beer and every place we went seems to have both regular 'merican beers as well as at least one specialty beer for that restaurant so he had great fun trying out new choices (particularly liked the organic beer flight at The Wave/Contemporary Resort and the 5-beer sampler at the Rose & Crown/England/Epcot)

If you're wantinga an elegant looking place at the Grand Floridian without the signature dining expense, try the Grand Floridian Cafe...we had excellent steaks there, and wonderful desserts. It's very elegant looking in there, but no dress code...overlooks one of the GFloridian gardens...but it's not a dress-up place , you'll be in and out in an hour, and it's only one table service credit. Full bar service available, too. Also like the Wave at the Contemporary, and Kona Cafe at the Polynesian...same thing, good steaks & fish choices, great desserts & awesome adult beverage choices.
 
Jiko's portions are decent sized; Citricos entrees are pretty small. If you guys are big eaters, you are either going to buy appetizers OOP or you may leave hungry. (And FYI, the appetizers at Jiko are the stars of that place; it would be a shame to eat there and not try some of the appetizers as they are better than the entrees). I don't find the desserts at the signatures to be that much better than the desserts at the 1TS places.

You will be fine at Citricos. I would not call Disney's signatures "fine dining". And they do serve beer. ;)

Correct. WE just returned this weekend and was on the Delux DDP and did a signature restaurant every night. (and a TS lunch every day). Doesn't matter where you eat, as the basic ddp does not include appetizers and the delux one does.
