How do you request a server?

We had a great server the last cruise we took and would love to get her again for our next cruise. Can you request a server ahead of time? Is there any way to check to see if a particular server is on a particular cruise?

You can have your request noted on your reservation, but there are no guarantees. Your server may be gone or have switched ships or assignments.

Can you check once you get on the cruise to make sure you got your choice (or on a web site or phone call)?
