How do you prepare scrambled eggs?

First I have a talk with them and let them know what's about to happen.

I give them some time to say their goodbyes and get their final affair in order.

Then I crack them into a cup and wisk them to shreds with a fork, add a dash of milk, pour in to a hot cast iron skillet, and mix them around with a wooden spatula until they're cooked.
 

For 2 people; 5 eggs with one white removed. Melt bacon grease in a sauce pan, whip the eggs with a dash of half and half, a pinch of Kosher salt and a few twists of the pepper mill set on coarse. Pour the mixture in. let it start to cook and tear up 3 slices of Premium American cheese. As the cheese starts to melt, foldthe eggs until they are cooked.
 
Scrambled eggs contain eggs that are scrambled, nothing more.
But I grew up hearing my mom say how restaurants try and stretch out the eggs by putting milk in.
I know that IHOP makes their eggs fluffier by putting pancake batter in them.
 
My mom always added a little cold water, so that is what I still do. I know lots of people who add milk including my grandmother.

My biggest problem is that most ppl over cook them IMO. I hate dried out eggs and I really dislike any brown color on them.
 
For me, I just scramble the eggs and cook. MIL adds milk and I don't really like them. I'm not sure why you would add milk. It just dilutes them.

Agreed! My MIL does the same thing. I like them how my Mom did them :) As she says "scramble them so the bounce" :) They can't be slimy!! And, to possible gross some people out, I add mustard. Just a bit and mash them up.
 
Just a splash of milk, has to be whole milk. That's what my dad taught me, my mother could not cook water.

A splash of milk, pinch of salt and cook in butter. My MIL put herbs du provence in hers because she likes to pretend she is french. Gross.
 
I was alone for dinner tonight, and this thread inspired me to do scrambled eggs. I threw in a big hunk of goat cheese, and it was amazing. Eggs are good.
 
I usually just beat them then pour them into a skillet, or I have used a griddle before too. (Well I will add some olive oil or some spray to the surface first) I know a lot of people add stuff like milk or sour cream, but I just never have.
