How do you make fudge?

I want to make it the way my Mom did.
she used Hersheys cocoa and cooked it in a sauce pan. It was kind of dry and crumbly ??? I loved it as a kid.
I am going to ask her too but I am not sure if she will remember.

I just checked out the Hersheys Cocoa recipe and I think that is prob what she used.

but I am open to any new suggestions. thanks

HI DisneyKim! That "dry type fudge" does sound like the original one on the Hersey's cocoa can. I have tried to make it, but it never turns out for me. I think the secret must be to use a candy thermometer. I don't own one.
If you decide to try something else, the fantasy fudge always comes out great. It will be a creamy fudge though.:D
 
One of the secrets to cooked fudge is a candy thermometer. The ball stage method never worked for me. Before I could tell if it was in a certain stage, it would be into the next one.

I honestly think fudge making is a knack and I am not one of those who has that knack.
 

I have tried a few different kinds and the only one that turns out every time for me is the fantasy fudge with the marshmallow creme
 
I bet that is the one. My husband also grew up on this kind of dry fudge and I have a hard time making it. My mother in law's recipe is the same one as that original Hershey's recipe. They kiey is in the cooking to the right temperature. Even with a thermomoter I can't get it right.
 
My fudge is runny. ugh. all that work. ;)
I tried to buy a candy therm at Target yesterday and they were sold out so I did the drop in the water method.

did I under cook it or overcook it? I think under cooked because its still very sugary???

I think I am going to look for a candy therm today at the supermarket when I go. :)
 
Candy thermometer is IMPERATIVE. Is the Hershey recipe the one that uses Milnot? My dad makes it, and it is THE best fudge I have ever eaten (and I have eaten my share...); it is the dry type and it is smoooooooooooth as silk, melts in your mouth.
