How do you make an ice cream cake???

My husband's birthday is in 2 days and while I usually get him an ice cream cake from Cold Stone Creamery, this year I spent over $1,500 on his present. I am not spending another dime on him. ;) I'm not even going to buy him a card.

Any suggestions?

I have made ice cream "cake" (minus the cake) this way before -- get an oreo cookie premade pie shell crust -- scoop out your favorite ice cream into bottom (less than 1/2 a container) -- grind up your favorite cookies and put in on top of ice cream - another layer ice cream (less than 1/2 of what remains) and then another layer of grinded cookies and then freeze until it is hard.

It is easier to soften the ice cream before scooping it -- I try to use flavors that go well together -- like oreo shell - oreo cookies and vanilla or chocolate ice cream --- or sometimes you can find other flavors of the premade pie shells.

I got him a gift card for a golf course. $1500 will only get him 4 rounds of golf. :eek: I'm hoping he'll take some friends and go away for the weekend. :laughing: Golf is a terribly expensive hobby.
 
My aunt used to make a cake 100% of ice cream--no cake, nothing else. She used a tube pan. She would scoop different flavors of ice cream & put them in a layer. Then she would smooth softened vanilla ice cram on top, then layer more scoops of ice cream, then more vanilla ice cream until she filled the tube pan. Then she would freeze it for a day or so, then unmold by dipping the pan in a little hot water or holding a damp hot towel around it. Then she would cover the whole thing with whipped cream. It was great.
 

I haven't made an icecream cake yet, but my sense is that it would be similar to a regular cake, you'd just need more round cake pans to freeze the in-between layers of icecream.

Here's what I'd do: Bake cake rounds per usual, and use a sharp knife to slice them in two (making thinner layers of cake). Then lay cut pieces of wax paper in cake rounds, and pour in softened icecream. Freeze. Then, when you're ready to assemble, pop out the icecream layers, alternate with cake layers. Freeze again while you're making frosting, then pull out to frost.

I do it with brownies in a Springform pan. Bake one layer of brownies (or put crumbled brownies in to make a layer), top with one or two flavors of ice cream and syrup (I like to swirl in carmel and hot fudge), pack it down even, then freeze. Then you can release it from the pan and frost it. I usually just frost it with cool whip.
 
OMG...you just HAD to post the photo! It looks pretty simple thou, looks like you just bake a round chocolate cake cut in half andlayer with ice cream between it, freeze it and serve with hot fudge and whip cream! yum!:woohoo:
 
My aunt makes one with ice cream sandwiches. In a large pan, layer your flavor choice of ice cream sandwiches. Then top with your favorite ice cream, and drizzle with a good ice cream topping. Add a small tub of whipped cream, and more topping, crushed cookies, candy, whatever you desire. Pop all in the freezer until ready to eat.

So simple, and many variations! :thumbsup2

The only ice cream cake I have ever made is a low-fat sherbert cake!!

Take one Angel food cake, cut it in half...spread softened sherbet in the middle...put halves back together and frost with lowfat or fat free cool whip!! Put in freezer to set!!! Viola!!
