I like it medium pink too, but dh likes it medium well so that's usually how it gets cooked.

I prefer my steak on the cow thank you!

The only time you'll see me eating a cow is when I get an occasional craving for an In N out burger (rare)

I don't really know how to describe it.....it definitely taste like beef but with more flavor and the texture is "smooth". With tartar...it is like silk.

ETA: When I get really rare steak.....I don't have to chew for 10 minutes to get the bite down....it is just a few chews and it "slides" down...with all the flavor.
