How do you handle vacations with older children?

We are in our early 40's with a son 19. We want to go on vacation all as a family, but DH and I would also like some alone time. If we're all in one room, it gets a little crowded - hahaha. We'll be at Universal in one of their hotels so that we can take advantage of FOTL. Last year for our anniversary we had a nine day trip all by ourselves - very relaxing.
Maybe we should just stay in one room and plan another trip somewhere for just DH and I.
Just wondering how other families with older teens/young adults handle "family" vacation. It's hard to call it vacation when you're all crammed into a 300 plus sq foot room. Thought about getting two rooms just for the extra space.

im 19 and went on a "family vacation" in january and we are planning another one for next january

the one we went on last january was myself, a friend, my brother and his friend, my parents and grandparents...there were 2 of us in each room (we went on a cruise,,small rooms!!)..we had dinner each night with the 8 of us and did some of the excursions together--meaning my friend, mom, and i did dolphin tour , while my dad and the boys did stingrays...

we all had our time away from family which was great....is it possible for your son to bring a friend?--our friensdd paid their way and just split the money for the room ...worked out great and that is what we are going to do in january again! good luck

I was going to suggest that also - let your son bring a friend, and get them their own room. They'll love it, and you get your private time.
