how do you cook your chicken?

It's a chinese dish that's yummy. :)

We also bread it, but some provolone on it and a dash of butter and some oregeno and bake. Serve with pasta and sauce.

Throw in crock pot with BBQ sauce

Last night we cooked brocolli, browned chicken and placed both in a pan. Mixed in a can of cream of broc with a bit of milk and baked. Kids loved it.

Chicken swiss: chicken with swiss cheese on it, a can of cream of whatever soup, crushed croutons and a cup of apple juice.
 
If you are cooking a whole chicken, try the Beer Can Chicken recipe! There are a few on youtube. We've done it several times over the summer. It's cooked on the bar-b-q and is DELICIOUS! I hate beer, but loved the chicken cooked this way. It does not taste anything like beer, but is succulent, Awesome and even the kids loved it!
 
I always cook chicken in my cast iron skillet. You could take the same piece of chicken, do it the same way, cook it in a regular pan, and it would stink compared to how it turns out in my cast iron.

I usually go very simple.. rub with olive oil, sprinkle with salt and pepper, add whatever spice/herb I'm going with that night, be it Herbs d' Provence, Mediterranean, Italian... whatever. Then I turn on the oven to 350. I put my cast iron on the stove top, heat it up to medium, then sear the chicken breast. I stick it in the oven for 10-15 minutes depending on the size, and juicy chicken. Every time.
 
Mediterranean Chicken- cook chicken on the stove top with salsa and olives, serve over cous cous quick and tasty
 

chix salad:

boil it, shred it, and mix w/ mayo for sandwiches.

add grapes, craisins, fun spices, whatever!

other than that, I am the queen of dry tasteless chicken. :confused3

We love chicken!! My favorite chicken recipe is to take boneless skinless chicken breast and maridade in Italian dressing, then grill it. Add a drop of Peppercorn dressing then top with Monterey Jack cheese and grilled onions and mushrooms...............mmm mmm good :goodvibes I serve with baked sweet potatoes with cinnamon sugar and toasted marshmellows.;)

Now I am hungry!
 
Chicken quesadillas/tacos

Cube and brown your chicken. Drain any excess juice, pour your favorite salsa (I actually started using picante sauce as it's not as chunky) and simmer for about 10 minutes. Fill your favorite shell, tostada, etc and top with your favoite toppings.

Another thing I do often is wait for the 30 min marinades (store brand) to go on sale for $1.00/bottle and stock up. I've become a HUGE fan of the chophouse/steakhouse one. Herb & Garlic, different flavors. Sometimes we'll throw it on the grill, sometimes I'll brown it on the stovetop and then bake it off for about 30 minutes. Serve it with your (kids) favorite vegetable and a starch (mashed potatoes, mac n cheese, rice) and your set.
 
for a great greek style chicken

1 cup plain yogurt
lemon juice
olive oil
crushed garlic
salt
parsley

marinate boneless/skinless chicken for 12 hours and grill
 
I guess I'm showing my southerness...but we love Chicken & Dumplings. I make it with (boneless, skinless) chicken breasts or tenders so it cooks up in a snap. I simmer the chicken in swansons broth to increase the chicken flavor, since I'm not using the whole bird. Did anyone want my recipe?

Oh, that beer can chicken is heavenly, but definitely you have to use the whole chicken to make it!:rotfl:
 
I'm not much of red meat eater, so we have chicken three or four nights a week. My favorite is to simply take frozen breasts and throw them on the grill. They come out crispy on the outside and moist on the inside with a little smokey flavor... YUMMY! I'll slice them up and the kids can dip them in ranch or ketchup. DH likes to dip them in Buffalo wing sauce.

I also put frozen breasts on a cookie sheet in the oven for a non-crispy version. I'll throw the breasts in a ziploc bag in the fridge and make dozens of different meals throughout the week... our favorites are: quesadillas, white chicken pizza, buffalo chicken pizza, mexican chicken pizza, chicken salad on croissants, spinach salad with chicken, pasta with chicken and alfredo or marinara sauce... all of these things are very basic chop, dump, warm dinners - I'm all for fast and simple.

Occasionally, I'll go to the extra work to actually thaw the breasts - then I'll dunk them in egg batter and coat them with crushed fried onions (like you put on green bean cassarole) before baking.... DH loves this!

My favorite is to take a bottle of Greek Dressing (I use Ken's Greek) and put it and boneless chicken breast tenders into a big plastic bag and refrigerate overnight. Then you can either grill them, bake them or throw them on a george foreman grill. They are soooo yummy and quick to cook because they aren't the whole breasts (if I have only the whole breasts then I just cut them into tenders) and I serve them with instant rice and a veggie. My family just loves them as do all my friends (they request it at every camping trip we go on).
Also with leftover chicken I use it the next night to make a greek pizza. I use garlic naan as the "pizza" crust and then brush the top of it with some of the greek dressing, then I put as much shredded cheese as I want, then I put slices of the leftover chicken, a little more cheese, some sliced tomato, olives, feta (anything you want really) and then drizzle a little more dressing on top and then bake it until the cheese is melted (usually 2-3 mins on 350-375). This can also be done on a grill if you put a piece of tin foil right on top of the grate and keep the lid closed for a couple mins.
Now I have to take some chicken breasts out of the freezer to make this tomorrow night! :goodvibes
 
2 cups diced cooked chicken
1/2 cup uncooked instant white rice
1 can (14.5 oz) diced tomatoes, drained
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, undrained
1 can (4.5 oz) Old El Paso® chopped green chiles, undrained
1 teaspoon Old El Paso® taco seasoning mix (from 1-oz package)
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup broken tortilla chips

1. Heat oven to 350ºF. Spray 2-quart casserole with cooking spray. In casserole, stir chicken, rice, tomatoes, soup, corn, chiles, taco seasoning mix and 1 cup of the cheese until well mixed.
2. Cover; bake about 1 hour or until rice is tender and mixture is heated through. Top with tortilla chips; sprinkle with remaining 1/2 cup cheese. Bake about 10 minutes longer or until filling is bubbly and cheese is melted.


I just made this today for the first time. I LOVED it. My kids didnt touch anything but the chips and chicken. It was a tad runny, so I would say drain the chilies and the corn too, and if you can figure out how to add xtra spice let me know because it seemed like it needed a bit more.

Since my kids refuse to eat dark meat (and hubby) I altered beer can chicken a bit. I use chicken breasts, and poke the w/ a fork over and over, then soak them from morning to dinner in beer and seasoning. Then I grill them. OMG SOOO GOOD. DH requested that the last night he was stateside.
 
We like chicken parmesean, chicken fajitas, salsa chicken in the crockpot, buffalo chicken pizza, chicken salad sandwiches, homestyle bakes.

Two Casseroles we really like are chicken breasts, crm ck soup, crm mush soup, lemon juice, mayo- mix and put in casserole, top with shredded cheese and bread crumbs and bake.

Another is stove top/crm cheese chicken. It is yummy!!!
 
take 4 boneless skinless breast
1 jar of salsa
1 can of corn
1 can of black beans
1 can of rotel tomatos

add all of it to the crockpot cook 8-10 hours on low
shred chicken in the crock then add a block of creamcheese
let melt in the crock
serve over rice or tortila chips


That sounds yum! Frozen or thawed chicken breasts? Drain cans?

Family Favorite

1 Pack chicken breast 1 lb - 1 1/2 lbs.
1 pkt Italian Seasoning
2 pkt Lipton Cream of chicken soup mix

Saute the chicken breasts on both sides in a little oil. Add italian seasoning and stir. Mix the two cream of chicken soup mix with 1 1/2 cups of water. I usually warm the water up and wisk the soup mix. Add to chicken and simmer for 15 minutes. The chicken stays:banana: moist and its a quick recipe.
