I think it's pretty easy, there are fruit vendors all over WDW, you can always order grilled chicken sandwiches at most of the little restaurants. The Land in Epcot has lots of healthy food in thier food court. and of course you will be doing lots of walking, just in case you decide to splurge those calories don't have a chance!
If you are serious about watching your diet it is really easy, you just need willpower!

No problem at all. As Fantasia Girl said there are tons of low fat snacks all over Disney. I was there last week and didn't gain an ounce even though I ate pretty much whatever I wanted. You do sooooo much walking!!! What I do is to eat a reasonable breakfast, low fat lunch and then enjoy dinner, dessert and all. It worked for me.
remember that you don't want to fill up with greasy, heavy food with all the walking you will be doing.
We saw people stuffing themselves for breakfast, then looking as though they could hit the beds rather than hit the parks. We always feel so much better having a "lite" breakfast, sharing lunch and dinner, and cooling off mid-morning and mid-afternoon by sharing a cold drink and snack.
If you must have a hot dog or hamburger, remember you can cut it in half and share it with another family member, leave out the fries and get carrot sticks instead or fruit cup.
Don't get me wrong, we ate our share of fat while there, but we did it sensibly so we felt like running a marathon!!!!
My husband and I split allot of meals while we were there. We ate a bit more often but smaller portions. Also most places will allow you to order from a childs menu.
I'm the kind of guy who can gain a pound just by walking past a cookie. So keeping what I eat in check is very important to me.
For breakfast I get a plain bagel no cream cheese or butter, with fruit and juice.
Lunch I split it with my wife. We usually get a chicken sandwich with the fruit cup no fries.
Dinner we go off a little and get what we want.
I do however like to hit the gym at the resort in the afternoon before dinner.
I've ordered kids meals at times. The portions are so large that it's often that I can't finish my meal. We always snack on the fruit and veggies throughout the park. And don't forget to drink lots of water!
