Saute means to heat quickly with oil over high heat. I saute my zucc. with olive oil and garlic. If you want it a little less aldante (crispy) after sauteing I add about a half a cup of chicken broth, put a lid on it,bring to a boil than simmer (turn heat way low) till the zucc is softer and has soaked up the juice.
