We have a 2 night stay booked for late May and just wandered how bad do you think the hub construction will be?

Not bad.
Phase one us set to open soon.
I'd bet more will be done by late April, although it wont be completed until near years end.

Its also avoidable to a large degree, goto Tomorrowland by way of the Plaza and circle around, or go in front of Casey's on the way to Adventureland
