How accurate is...

Given the various options out there, I wouldn't choose UT for picking park days. Tickets,definitely.

Undercover Tourist is a perfectly reputable site for purchasing tickets, but the other sources PPs have mentioned specialize in crowd calendars. They are the experts in that area.
 
Their results are almost always the same anyway. I use Undercover Tourist, myself because I like the visual display of the calendars they use - it's just easier for me. And simpler - I don't need all that extra info that easywdw processes - it's just too much. I just wanna know when and where to go - that's it, and to do it quickly, and aesthetically, the design of the UT just is better for my eyes. Navigating around the easywdw site is a pain too.
 
I used UT for our September trip and they were spot on. When I compared it to others I didn't see much difference, but like a PP said, I find their layout easier to use them some of the other options. EasyWDW is overwhelming to me and too much info.

Does anyone know how they collate this information? How do they know how busy each park is going to be on certain days?

I don't know about other sites, but Josh at easywdw.com uses logic. He says not to go to parks that have EMH because he feels that a lot of people who stay on property think that the EMH schedule is Disney's way of telling them which park to go to on which day. He generally does not recommend MK on Mondays because a lot of people start their vacations on Sunday and want to do their first full day at MK. If you look at his recommendations, you'll see that he gives reasoning for why each park will or won't be be busy on a given day.
