I agree to at least look into a villa rental. The two older kids would have to take the sofa sleeper if you do a one bedroom villa, but the baby can fit in next to you (not exactly privacy though - but then again all five sharing one room isn't either!).
We have rented from owners off redweeek, but usually kind of more close to our travel dates. Not ideal for your situation maybe. Most times, though, I had a reservation that I cancelled when I got the rental booked. For our upcoming spring break, we got a one bedroom/two bathroom villa at AKL Kidani for $2,000 for seven nights. If we had booked through Disney, it would have been well over twice that (it's Easter week).
I know it doesn't scream honeymoon, but a suite at AOA does look very cool too! I walked around there last trip, when DD and I stayed at Pop. We thought it was so cute! We loved the food court options at both really - I've always stayed deluxe in the past, but honestly thought a food court was so ideal! There was so much to choose from! Now, we only did breakfast once (split a platter), as we're not huge breakfast eaters. We had snacks in the room for breakfast mostly, but did have a few dinners (most times took back to the room, as the food court can get noisy).
You could always start the trip somewhere like that, then move to somewhere fancy that is your dream place for part of the trip (depending on how long your trip is and if you like to move). I honeymooned at the Grand Floridian. I don't think it's what it used to be, though.
I don't know your budget, but you could look into a club level room maybe? You probably wouldn't need a dining plan with that - you'd have breakfast covered plus afternoon appetizers and desserts (and unlimited beer and wine, and soft drinks and milk, etc...). We did club level once at AKL and it was wonderful! My friend did it at the BWI, and I joined her in the lounge a couple of times - I wasn't as impressed at all with their lounge offerings.
