I can remember a few hot dog recipes from when we were growing up. I still love to eat them on occasion, all though my DH insists that I use the 'good' hot dogs, which can get a bit expensive. Totally defeats the purpose of a cheap meal.
Hot Dog Potato Chowder
1 package hot dogs, cut up into 1 inch pieces
3-4 potatoes, cut up into bite size chunks
1 bag frozen mixed veggies (corn, peas, carrots variety)
1 small onion, chopped
1 bay leaf
2 cups milk
1/4 cup flour
2 chicken bouillon cubes with 4 cups water or 1 quart chicken stock
salt and pepper
Heat up a couple tablespoons of olive oil or cooking oil in a large pot. Throw in hot dogs and cook till browned. Remove and add onions. Cook until translucent. Add chicken stock or water and bouillon cubes to pot, along with potatoes, veggies and bay leaf. Cook for 10 minutes and add back hot dogs.
In a separate bowl or cup, mix flour and milk to together until totally combined. Once potatoes are cooked through, add milk mixture to pot and allow to simmer till it thickens. Add salt and pepper to taste. Feel free to add other spices also. I generally add in a few shakes of garlic powder and chili powder.
Chili Hot Dog Enchiladas
8 hot dogs
8 flour tortillas
2 cans chili
1 can tomato sauce
3 cups shredded cheddar cheese
1 small onion, diced
Mix together chili and tomato sauce in a small saucepan over low-med heat till heated through and mixed together.
Lay 1 hot dog in center of tortilla, pour a couple tablespoons of chili over it and then 1/4 cup cheese and a sprinkle of onion. Roll up and place in baking pan, seam side down. Repeat with remaining hot dogs and tortillas, then pour remaining chili over enchiladas, being sure to spread out and cover of the tortillas. Sprinkle any remaining cheese and onion on the top.
Bake for 25-20 minutes in a 350 oven.
Potato Hot Dog Bake
8 hot dogs
2 cups mashed potatoes
8 slices American cheese or 1 1/2 cups or so of shredded cheese
Split hot dogs, lenghtwise and place on cookie sheet or in baking dish. Spoon 1/4 cups mashed potatoes on hot dog and top with cheese. Bake in 350 oven for 20 minutes and then broil for 3 or so minutes.
Franks and Beans Casserole
8 hot dogs, cut into 1 inch slices
2 cans beans (baked beans, pork and beans, etc)
2 Tbs mustard
2 Tbs brown sugar
2 Tbs Worcestershire sauce
a small onion, diced
1 box jiffy cornbread mix
2 cups cheese
Mix beans, mustard, brown sugar, W sauce, onion and hot dogs together and place baking dish that has has been sprayed with cooking spray.
Mix corn bread mix with whatever the box calls for, adding the cheese. Mix together and pour on top of bean mixture, making sure to spread it, covering everything. Bake at 350 for about 45 minutes.
