Hot Appetizers/Dips

I'm with others who said they would only do 1 kind of meatballs. In my circle we aren't big meatball fans. :) I'd do the little sausages from Hillshire Farms in one, covered with just plain old BBQ sauce (I know people do them with jelly but I prefer plain old BBQ sauce lol), do the meatballs in another and I'd probably do the buffalo chicken dip in the last one. That stuff is so good.....lol

If you are thinking you might do meatballs, might I suggest BBQ meatballs? I find they are just so much more versatile than marinara-based meatballs.

A great dip I know of is called Cheeseburger Dip....it is a little like the traditional Velveeta/Rotel, but with a different spin on it. Instead of sausage, we use beef. It also uses Velveeta, but no Rotel. Instead, there is Ketchup, lots of onions, and a little mustard.

I do meatballs with grape jelly and chili sauce. It sounds awful, but its really good!

I actually heard about this here on the DIS and it sounded like such a 1960's throwback that I was a little embarrassed to even try it the first time. WOW is it good and always gets such a great reception - I used pre-made turkey meatballs for NYE and everybody loved it.

Jelly (grape). Doesn't it sound wierd? But when I make my meatballs in the crock pot they are GONE! I get asked to bring them all the time. Grape jelly and ketchup in the crock pot first. I make bite size meatballs. They also have beef chirizo in them ~ gives them a kick which tastes so good with the jelly/ketchup sweetness. Cook them in a tray that I spread some tomato sauce on first to coat ~ throw them in the crock pot with the juice from the pan. Everyone loves them! I did learn the hard way to pack them tight or they will fall apart - oh - and make them bite size. Rookie mistakes.

My favorite hot dip is just salsa, cream cheese and cheddar cheese, baked until hot. It looks awful, but it is so delicious with bread or chips.

What is Rotel?

It's some sort of canned tomato with chilies (think Mexican flavour profile). It sounds very handy for making queso but it's not available in Canada. When I do mine I mix in salsa and a can of chopped green chilies and chilli powder. I imagine Rotel is just all that already in a can.

We have a month until the shower so I'm going to play around with the velveeta/rotel combinations. I've never had it before so it will be fun to try.

I'd love a buffalo dip (I always make buffalo meatballs for parties) but my family isn't so keen on the idea. I had a buffalo dip at a Christmas party that was amazing so I may ask for the recipe and try that!

And those meatballs with the grape jelly are always a hit so I may try those too.

I do a variation of this with 8 oz cream cheese, 8 oz shredded cheddar, 1/4 c salsa and 1/4 cup sour cream baked in a hollowed out sourdough bread round (keep the "lid" of the bread on). You wrap the whole loaf in foil and bake it on a cookie sheet for about an hour to an hour and 15 minutes. The bread is practically licked clean by the end of every party.
