I had special requested the fish at Hoop De Doo (Christmas Day -- and yes, the show was modified into a bit of a holiday version at least on that day). I was very pleased with the meal I got. I called the offices the day before (I don't remember the number, but I got it from WDW-DINE) and they had some different options to offer me since I wanted something healthier than the ribs and the fried chicken. I took them up on the grilled fish with a baked potato and steamed veggies so I didn't get a chance to hear any vegetarian (non-animal) choices. They did ask if the salad, bread/butter, other sides, and strawberry shortcake would be ok so they seemed to be ready to offer substitutions for those if need be. The meal my server brought me had a plate filled with 2 6-oz pieces of grilled mahi mahi, a baked potato, and about 2 cups of steamed mixed veggies. The fish was really really good, although I could only eat one of the pieces and the steamed veggies hit the spot! I did have the regular salad, bread/butter, corn on the cob, and strawberry shortcake but skipped the baked beans since I'm pretty sure that those had pork or bacon in them.
