Homemade shippable food 4 care pkg?

I have no good ideas and thought I'd turn to the DIS community for help!

My BIL passed away suddenly in his early 40's last week leaving behind a widow and teen children.

I remember my mom walking around in a daze when my dad passed away (he was also in his 40's). If we got her to eat a few bites during the day we were lucky!

We want to send SIL a care package with foods that she can munch on when she does not feel like eating a whole meal. They already have friends bringing dinners. We live in another state so we are going to ship a care package.

Anyone have any good snack or other recipies that would be shippable? Stuff that does not need refrigeration?

How about checking to see if there is a grocery delivery place near them and order some baby carrots, cut up celery, dip, etc. and other munchy type food. Otherwise, maybe a fruit basket from a company or something along those lines?? Do you know any of her friends? Maybe you could send a gift card for a local grocery store and maybe the friend will shop for you.
 
Quick breads like pumpkin, zucchini and banana ship well. You could do them in mini-loaf or even mini-muffin form for snacks.
 
My long distance Bf sends me rice krispy treats (in the shape of mickey ears of course) an I eat them whenever I feel upset or miss someone. Not exactly the healthy route but they sure taste great and are very easy to ship.
