Homemade Meatballs........need a good receipe!

I have been craving spaghetti and meatballs. I can do the Spaghetti and Sauce but I have never been able to make those great big meatballs like you get in a restaurant. I need a receipe!!

Something with parmasean cheese......... can you make them in a Crockpot?
 
I don't use a recipe, I just kind of wing it!

In general, I use ground beef, 2 or 3 eggs, seasoned bread crumbs, garlic, and parmesan cheese.

I used to fry the meatballs before adding them to the sauce.

I bake them now -- less fat that way.
 
ketchup, garlic, salt, pepper, worcestershire sauce, parm cheese, beaten egg and breadcrumbs or crushed up pretzels. mix and make into whatever size you prefer. bake at 350 in a pan until done. make sure the pan has sides, do not use a cookie sheet. you can put diced onions in them too.
 
use two pounds or so of beef and italian bread\crumbs and egg....then smoosh them all up and drop them into my sauce.......I cook them all day simmering on the stove ...but in the sauce to cook......they are good and soak up the sauce as it is cooking
 

As everyone else

Chop meat, Fresh Garlic, Basil, Seasoned Bread Crumbs, Grated Cheese Lots of Grated Cheese..Eggs, mix and Fry or Bake.. I personally like the crispy outside and then add them to the sauce for a few hours so they can soak up that flavor too.. YUMMY

Okay Now I want MeatBalls too!! :hyper:
 
LOL! I'm going to the store first thing in the morning and getting all the ingrediants to make Spaghetti and Meatballs!! YUM!!! I think I'll do a salad and some Garlic Bread and ??????

What else sounds good........I need an Italiany Dessert!
 
Take a pound of ground round and ground pork. Mix 2 eggs,seasoned bread crumbs,salt pepper,romano cheese,and a little diced onion. Mix well. Fry in pan with a little olive oil cover let cook over medium heat. Forgot fresh garlic and fresh basil.
 
For dessert, frozen Italian Ice cuz you're gonna be too full for anyting else!

here's a great dessert: take some high quality vanilla ice cream ( one pint)and let it soften at room temperature. Add about 1/4 cup toasted crushed walnuts, and some Vin Santo- this is an Italian dessert wine- I usually put in about 1/4 cup for a pint. Mix together in a bowl, and refreeze in a plastic container . It's great with biscotti or macaroons:D

I usually make meatballs to go in red sauce - I use different variations if making Swedish meatballs or other types.

For Italian meatballs I use:

ground beef (not too lean!)+ another ground meat (chicken, turkey, pork)
an egg
salt n pepper
parm. cheese
pinch of fennel seeds
garlic powder
white or Italian bread
basil

I like bready meatballs and soak the bread with water and squeeze out the water. I mix all ingredients until mushy. I brown the meatballs in the pan to make sauce in until brown on all sides. Then I add the sauce ingredients and cook the meatballs in the sauce.

Here is an interesting recipe I intend to try, if only because my daughter will think it's 'neat'. Kids LOVE to form the meatballs!

Grape Jelly Meatballs

1 1/2 cups chili sauce
1 cup grape jelly (can use currant jelly)
1 to 3 tsp Dijon mustard
1 pound lean ground beef
1 egg, lightly beaten
3 Tbs fine dry bread crumbs
1/2 tsp salt

Combine chili sauce, jelly, and mustard in crock pot and
stir well. Cook, covered, on high while preparing
meatballs.

Combine remaining ingredients and mix thoroughly. Shape
into 30 meatballs. Bake meatballs in a preheated 400
degree oven for 15 to 20 minutes; drain well. Add
meatballs to sauce, stir to coat, cover and cook on low
for 6 to 10 hours.
 
Simple, but yummy!

1lb ground beef
1 cup Italian seasoned bread crumbs
1 cup grated romano cheese
1-2 eggs

Mix it up, make into balls, fry in oil before adding to sauce.
Continue to simmer in the sauce for a few hours.

Absolutely they must cook in the gravy, do not bake or fry or crockpot them.

I use beef, eggs, garlic, locatelli cheese and bread crumbs. No set amount just wing it. The longer they simmer, the better they are and even better the next day.

While I usually "eyeball" most of the things I make, I actually have a recipe for meatballs - with measurements! :eek: ;)

2 lb hamburger
½ c Parmesan cheese
¼ c bread crumbs
½ tsp garlic powder
dash pepper
1 c oatmeal
2 eggs
1 tsp salt
½ tsp oregano

Combine hamburger, cheese, crumbs, garlic powder, pepper, oatmeal, eggs, oregano & salt. Simmer in the sauce, all day is best!
 
My in-laws are Italian and they spend all day making their special sauce from scratch. They sometimes add sausage and pork to it. They were not impressed when I told them that I like the Kraft Zesty Italian spaghetti in a box...it comes in green box and has the pasta, an envelopt of seasonings and some parm cheese. All I have to add is the tomato sauce.

They were also not impressed when I told them that I like Chef Boyardee lasagna kits. Everything right together in a box, but I do add extra stuff to it.
 
Ok, my recipe doesn't vary too much from what's already been posted -- BUT... I have a question from you meatball savvy folks:

I always either bake mine (or cook with the sauce). However -- my MIL boils them in water. Anybody ever heard of this? SHe claims that's how she's always done it -- and that it's the truly "authentic italian" way to do it.

They taste fine -- but I had simply never heard of this (and I personally prefer my way better... when I bake them, I can make oodles more in one batch than she ever could in her boiling method).

Anybody else do theirs this way?
 
I buy Mama Lucia's frozen meatballs at the Acme and add plain Ragu. All the kids in the neighborhood rave about my homemade meatballs. Their EYEtalian Moms are NOT amused.
 
My meatball recipe comes from the Betty Crocker cookbook (bridal edition). No cheese in them, but they are really good. I usually bake them first, then heat up the sauce with them in it.

My stepson absolutely LOVES these meatballs - to the point where he was bummed when I made lasagna when we had guests because he wanted them to try the meatballs. (That really made me happy because while he is generally likes what I make, he never gets that excited about any of it).

Anyway, here's the recipe...
1 lb. lean ground beef
1/2 c. dry bread crumbs
1/4 c. milk
1/2 tsp salt
1/2 tsp Worcestershire sauce
1/4 tsp pepper
1 small onion, chopped (1/4 c.)
1 large egg

Makes 20 meatballs, about 1.5 inch

Bake 20-25 min. at 400
 
2 Pounds 85% Lean Ground Beef
2 Eggs
Parmesian Cheese
Seasoned Bread Crumbs
Salt and Pepper to Taste
1 Can Franco American Beef Gravy

Bake at 350 for 30 Minutes
Simmer in Sauce.
