Upside-Down Apple Gingerbread

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup butter or margarine -- melted
2 large apples -- cored and sliced
1/3 cup packed brown sugar
Gingerbread
1/2 cup butter or margarine -- melted
1/2 cup molasses
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup hot tea

Pour butter into a 9" square baking pan.
Arrange apples over butter. Sprinkle with brown sugar and set aside.
For gingerbread: Combine butter, molasses, sugars and egg in a mixing bowl. Mix well.
Combine dry ingredients. Add to sugar mixture alternately with hot tea. Mix well. Pour over apples.
Bake at 350 degrees for 45-50 minutes or until cake tests done. Cool for 3-5 minutes. Loosen sides and invert onto serving platter. Serve warm.

I'm not going to list every single recipe because there are sooooooo many of them (NOT a complaint!!!), but here's and idea of what I received:

An apple themed dish towel
A cherry lemonade Yankee candle votive (I think that's the size)
2 micro popcorn bags with a yummy sounding recipe for a mix I am going to make ASAP
Quite a few Wal-Mart assoc. recipes (the cheesecake looks delish!)
A huge pile of printed out recipes (I haven't even read them all yet!!)
An even bigger stack of hand-written recipes (girl, you are too kind!)
A TV Guide Celebrity Treats and Sweets magazine w/ recipes from Barbara Mandrell, Jenny Jones, and Robin Mattson)
A Good Food for your Family Cookbook
Betty Crocker Cookies and Bars cookbook

I am in a state of shock!! PLEASE forgive me if I left out anything.

Chocolate Peppermint Spoons

Serving Size : 12 Preparation Time :0:12
Categories : Candy

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup semisweet chocolate chips -- melted
5 red and white peppermint candies -- coarsely crushed
12 plastic spoons, in assorted colors

Dip spoons in melted chocolate. Shake off excess.
Place on waxed paper-lined tray.
Sprinkle one side with crushed candy. Allow chocolate to set.
Wrap in food-safe cellophane. Tie with ribbon.

NOTES : For plain chocolate, leave off the candies.

That literally must have flew to TN since I sent it Thursday I am so glad you liked everything I included. The popcorn recipe is my favorite. I really had a lot of fun finding all those recipes. This is one of my favorite exchanges of the year.
