Spicy Rudolphs

Amount Measure Ingredient -- Preparation Method

1 box gingerbread and cookie mix -- (about 14 ounces)
1 bag thin pretzels -- (about 10 ounces)
24 unsugared gumdrops -- (Dots)
24 spearmint gumdrop leaves
1/2 cup semisweet chocolate chips -- melted
48 small white oval mints -- (Tic Tac)

Prepare gingerbread mix using cookie or gingersnap recipe on box.
Shape dough into a 12" log. Wrap in plastic wrap or waxed paper and freeze for at least 2 hours or until firm enough to slice.
Carefully break enough pretzels to form 2 antlers for each reindeer.
Heat oven to 375 degrees. Lightly coat baking sheets with nonstick spray.
Slice dough into 1/4" thick slices.
For each reindeer, overlap 2 rounds (head and muzzle) on prepared baking sheets, leaving room between each reindeer for antlers. Insert antlers under dough on top of head. Press dough gently around antlers.
Bake 8-11 minutes until cookies look dry. Cool on baking sheets 1-2 minutes before removing them with wide spatula to a wire rack to cool completely.
Nose, smile and holly berries: Slice a 1/8" thick round from bottom of red gumdrop. Set top aside for nose. Cut round in half crosswise and scoop off a little from the straight edge of one half to form Rudolph's smile. Set aside. Roll scraps into berries.
Holly leaves: Cut spearmint leaves in half lengthwise. Turn sticky surface up. Press on berries and set aside.
Using a toothpick as a spreader and melted chocolate as "glue", glue nose, smile and holly leaves on cookies. Glue on mints for eyes. Dot with chocolate for pupils.
Let stand until chocolate sets.

My package has been ready since the weekend, but the ding dong laminator at school has been on the fritz. Well, it was working today! So my recipes are laminated and my package is ready for the PO tomorrow. Whew! Cut this one close to the deadline! Hope she likes it. :wizard:

Cinnabon Rolls

Amount Measure Ingredient -- Preparation Method

1/2 cup warm water
2 packages dry yeast
2 tablespoons sugar
1 package instant vanilla pudding mix -- (3 1/2 ounces)
1/2 cup margarine -- melted
2 eggs
1 teaspoon salt
6 cups flour
1 cup butter
2 cups brown sugar
4 teaspoons ground cinnamon
Cream Cheese Frosting
8 ounces cream cheese
1/2 cup margarine
1 teaspoon vanilla
3 cups confectioners' sugar
1 tablespoon milk

In a small bowl combine water, yeast and sugar. Stir until dissolved. Set aside.
In a large bowl, take pudding mix and prepare according to package directions. Add margarine, eggs and salt. Mix well. Add yeast mixture. Blend. Gradually add flour. Knead until smooth. (You will need approximately this much flour.)
Place in a large greased bowl. cover and let rise until doubled. Punch down dough and let it rise again. Then roll out on floured board to 34x21".
Take the 1 cup butter and spread over surface.
In a small bowl, mix brown sugar and cinnamon. Sprinkle over top of dough.
Roll up very tightly.
With a knife, put a notch every 2". Cut with thread or knife.
Place on lightly greased cookie sheet 2" apart. Take hand and lightly press down on each roll.
Cover and let rise until double again.
Bake at 350 degrees for 15-20 minutes. Take out of oven when they start to turn golden brown. DON'T OVERBAKE.
Frost warm rolls with Cream Cheese Frosting.
Cream Cheese Frosting: Combine all ingredients until smooth.
Makes 20 very large rolls.


NOTES : I half the recipe for my family.
I also make the dough in the bread machine.

What a welcome surprise today! I got my package from Heidi (pooh67_68) and it is wonderful!

She sent:
5 recipes in a plastic sleeve to keep them neat. Pecan pie (DH's favorite), peppermint bark, ladyfinger cheesecake (DD will love this), eggnog and baked apples. I'm anxious to try all of them!

Also in the box...3 different sizes of wisks (which I really needed!)
5 different sizes of plastic scrapers (you can never have too many of these)
measuring spoons
a nut cracker set
an apple slicer
a matching oven mitt and kitchen towel
and a food storage saver. (you must have been reading my mind because I ruined on just like it last night! :rotfl: )

I have everything ready to go, I was planning on going to the post office today, but found out BIL was injured at work (found out it was only a fractured ankle thank goodness) and that derailed me. I will definetly get there tomorrow, I will post after I go.

I just realized I forgot to put a note in mine. It has nothing in it to identify me!! :guilty: My name is on the address label on the outside of the envelope, tho'.....sorry about that! :wave2:
 
Mine *will* be going out priority on Monday. Just too busy until then. We had a faculty meeting right after school and then parent conferences until 6pm. What great planning by our principal!

Tomorrow is DD who'll be 20's birthday, DS6's karate with the "grand master" and Ds16's football game/halftime show.

I'm sorry it'll be Monday. :( I'll try to make it worth the wait.
