I am having a terrribly awful week emtionally here. Would it be too tacky to just Xerox the recipes and send them. :(

I had wanted to printed them out on this cool computer paper with a holiday theme, but right now I'm am so into a depression that it's all I can do to go to school and teach, and even today I burst into tears during my one break.

I have great "go with stuff", that I bought last week when my sun was shining, but can't get it togehter this week to get to those recipes.

I'll be lucky to get them out Friday as it is. I could probably do a better job if I could send them out Monday, but I don't want to be late.

Sorry, to be such a pooper. :guilty:

Would you like to assign me your name?? I don't mind sending an extra one out.... You shouldn't have to worry about it right now!!

Gingerbread Cream Cheese Spirals

Gingerbread Dough:
½ cup butter
½ cup packed brown sugar
¼ cup molasses
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon baking soda
¼ teaspoon ground cloves
1 egg
2 cups all-purpose flour

Beat butter in large mixing bowl with an electric mixer on medium to high
speed for 30 seconds. Add brown sugar, molasses, ginger, cinnamon, baking
soda, and cloves; beat until combined. Beat in egg until thoroughly
combined. Beat in as much of the flour as you can with the mixer. Stir in
any remaining flour with wooden spoon. Divide dough in half. Cover and chill
dough at least one hour or until easy to handle.
Cream Cheese Dough-
1/3 cup butter
1 3-ounce package cream cheese, softened
1 cup sugar
½ teaspoon baking powder
1 egg
½ teaspoon vanilla
2 cups all-purpose flour
1 teaspoon finely shredded orange peel
Beat butter and cream cheese in large mixing bowl with an electric mixer on
medium to high speed for 30 seconds. Add sugar and baking powder and beat
until combined. Beat in egg and vanilla until thoroughly combined. Beat in
as much of the flour as you can with the mixer. Stir in orange peel and any
remaining flour with wooden spoon. Divide dough in half. Cover and chill at
least one hour or until easy to handle.

Roll each half of the cream cheese dough between two sheets of waxed paper
into a 10"x 8" rectangle. Place these on baking sheets. Chill in freezer for
15- 20 minutes or until firm. Roll each half of the gingerbread dough in the
same manner. Remove cream cheese rectangles from freezer. Peel top sheets of
waxed paper from all rectangles. Carefully invert one cream cheese rectangle
over a gingerbread rectangle. Remove the waxed paper from tops. Let stand
about five minutes or until dough is easy to roll.

Roll up, jelly-roll style, starting from one of the long sides, removing
bottom sheet of waxed paper as you roll. Pinch to seal. Cut roll in half
crosswise. Wrap each roll in waxed paper or clear plastic wrap. Repeat with
remaining two rectangles. Chill about four hours or until firm.

Remove one roll from the refrigerator. Unwrap and reshape slightly if
necessary. Cut dough into ¼ inch thick slices and place on greased cookie
sheet. Bake in a 375 degree oven for 10 to 12 minutes or until edges are
firm. Cool cookies on baking sheet for one minute before removing to wire
racks to cool completely. Repeat with remaining dough.

M: She got it! I talked to her last night. She was very excited because it arrived on Monday - which just happened to be her birthday, and she hadn't really gotten anything else so the arrival of your package was perfect timing. (Yes, I'm a terrible friend and I forgot her birthday - again! I remember it last week but by the time Monday rolled around - I forgot again.)

I told her that I'd post today to let you know that she'd gotten it! But she is going to try to get in here in the next couple of days to tell you thank you herself.

Thanks for letting me know I hope she enjoys the package !

I really love the Santa cookie dish and also those wonderful recipes! I can't wait to try the Mashed Potatoes one, they sound awesome! Thanks again, it was a wonderful surprise to get in the mail!!

Big hugs for you. I know how you feel. Are you sure you are not hiding in my house somewhere??? ;) Never feel guilty about feeling down and overwhelmed. We've all been there. Just remember that we are here for you whether you are having a good or a bad week.

Take care of yourself. :wizard:

Thank you! I'd love to be hiding out in anyone's house! I did rest some today after school and DH took Ds to karate. I did type up some recipes tonight so that's good. I'll just be glad for the weekend.

I think I'm just tired and my middle one had exams this week, my oldest has her bday Friday and I don't have a present or anything. She'll be 20 and I can't believe it. DS6 is having a very hard time at school and is being picked on. That's what's really breaking my heart.

Our local Susan Komen Race for the Cure is Saturday and our stupid Assistant Principal had the GALL to come up to me at the end of the day and tell me to go see the principal because I was "so involved" with the Race and the Catholic Church just "banned" it because money went to PLanned Parenthood. Article was in our paper yesterday.

I just looked at him like he grew a second head and said WHAT? I had registered over a month ago for the Race for the Cure and was not "involved".....a mom in our school has posters all over about our school team, not ME. I do support it and will walk proudly in my Survivor shirt, but even if I was super invovled, what the heck was HE going to do about it and what business is it of HIS? He's such a freaking idiot! How insensitive was that!

I can't wait for this week to be over. I LOVE *teaching* but I sure hate the crud that I have to put up with from my adminstration. Once more straw and this came'l back is going to break.

:( :( :(
