Okay, tell me about Hilton Head. I'm worried that it is to secluded from every thing, is it? How far away or other things to do not related to Disney. Like places to eat, movies and mini golf? Or does Disney pretty much have you locked in? I heard that it is really expensive there as well.

Movies, restaurants and minigolf are all right there and most within walking distance. The DVC resort is mid island. There are several good restaurants in or around Shelter Cove. There is a mini golf place about a half mile or less from the resorts. I think there is a movie option at the mall that's close by but I'm not certain. As for expensive, HH is like any other tourist place and less so that WDW. There are many great places to eat on HH, some of my favorites are there but chosing between them is difficult. Go for it.
 
As there are no sit down restaurants on DVC HH, just a snack bar by the pool, it is about as far away as "Disney has you locked in" as it can get. As Dean says there are a number of decent restaurants a couple of minutes walk away around "Shelter Cove marina" there are many more within 10 minutes drive. Things to do, arranged by Disney, include beach trail ride, dolphin cruises, nature walks and a lot of activities for the kids. The beach is about a mile away and there is a walking path to the very nice beachhouse if you don't want to drive to it. The pool at the resort has a great slide and my kids had a great time there. I went to one cinema , that was to be honest looking a little dated, but I believe there is at least one other, more up to date cinema in the area. There are also some great golf courses in the area and the historic towns of Savannah and charleston are both within an easy drive.
I didn't find the restaurants at all pricey, and if you're prepared to go a little out of season there are often some great deals for DVc accommodation available.
 

How much do some of their beach walks and bird-watching tours cost?
 
The bird and Aligator walk was free this was an "organised activity" on Pinkney (sp?) Island. You have free access to the public beach via the beach house but I don't think there is anything organsied to go along with .
