You'll find a lot to do right at the resort with your son. They have crafts, storytelling with B'Lou and he does a magic show on Saturdays, there's a campfire with interactive storytelling and s'mores, and various nature 'activities.'
Out of Shelter Cove and to the right is miniature golf at Pirate's Island. Shannon Tanner has a sing along for kids in Shelter Cove at 7 PM weeknights, and I believe 8:30 PM in the summer. There is also magic and puppet shows at Coligny Plaza (?10 AM and 6 PM.)
The dolphin cruise through Disney is wonderful. The dolphins come right up to the boat. Some of the other cruises have pretty large boats and you can only see them from a distance. Disney will turn the boat and get right next to the dolphins.
There are outlet stores just before you come onto the island and a mall in Shelter Cove.
As for restaurants, they are endless on HH. The Old Oyster Factory seems to a favorite of many and we have had great meals there. Getting there after 6 PM usually means an hour to 1 1/2 hour wait. Salty Dog Cafe in South Beach has good seafood as does Scott's Fish Market in Shelter Cove. We loved Alexander's, but left our boys at kids' night out at the resort. San Miguel's in Shelter Cove has decent Mexican. We liked Guiseppe's for pizza.
The resort will give you a list of activities for the week when you check in and just about every store and restaurant will have Restaurant and Activity guides for the island. Pick one up.
