Here's my game plan....

Three nights at Vero Beach and one night at Saratoga Springs, Labor Day weekend.

Wanting to stay over at SSR the last night to enjoy Disney Springs, the pool area and just enjoy the whole resort in itself.

May head over to the Magic Kingdom area that night to watch the fireworks. But where would be a really good place in which to do that? (not actually in the park)

If you book a dinner at California Grill, their observation deck would be a good place. If you don't want to do that, the 4th floor observation deck at the Contemporary is another option. Or the TTC. Or the beach at the Poly. Or the boat dock at the Grand Floridian. I'm sure there are others, but those are the ones I know of.

Right, just worried about how crowded it will be for that holiday weekend. The beach at the Poly sounds nice, but it may be reserved for guest only.

If you are a DVC member staying at SSR on points, you can use the Top of the World over at Bay Lake Towers.

I don't believe the OP is a DVC member (based on other posts from her) and is not staying at BLT, so she will not be able to go to Top of the World.

You are not a DVC member?

If you are, you can go to TTOTW because you are staying on site in WDW. It is not a black out day. On Black out days, you must be a DVC member staying at BLT.
