Help!!

I am bored silly and it's only day 5 into a long time being laid up so I am hoping DISers will be willing to do 2 things a) keep me company and b) give me EASY recipes to supervise my family in making for suppers.

I broke my ankle last Friday afternoon sliding down a hill where my ankle slid a little slower. I can not put any weight on it for at least 2 more weeks and surgery to put a plate and screws in isn't until next Wednesday2,10.:sick:Because of a family history of blood clots I get to give myself shots of blood thinner:scared1:.


I am thankful for a few things:

I am unemployed right now so I don't have to ask for time off

I have a high threshold of pain....a lady with a similar break is in the hospital because of the pain.

Where in Co. are you? My dh was born in Pueblo...I hope this helps with your boredom...at least I'm not the only one unemployed and bored...:lmao:
 
Hi Theresa, I'm Crystal and I'm in a similar predicament. Sunday I was carrying in groceries and fell in my driveway. I'm in NC so not used to ice/snow. I was walking when I heard a pop, then my ankle twisted, my huge butt fell to the freezing snow, and my groceries on top of me. I went to the dr yesterday and it is badly sprained and I have a boot thing that laces up then velcros three ways and crutches. The dr thinks I broke a bone from my x-ray but sent it off somewhere and I'l find out tomorrow if I broke it and need a cast. I can't drive (right foot) or do anything involving putting weight on it. They gave me vicodin and I'm back at work today with my foot propped on a paper box with a heating pad. It hurts something bad. Luckily I knew my kids would be out of school with dh b/c of the weather, so I bought spaghetti-o's, poptarts, mac & cheese, & chicken nuggets which will probably now be my supper for the next week or else eat dh's cooking. I think I've convinced my mama to cook and bring real food to me once the roads are better.

I totally feel for ya. I've read 5 of my son's cat Warrior books laying in bed two days, lol.

I have a fairly easy recipe for you that goes over BIG TIME in our house. DH and DS ask for it often!

Yum A Setta

2 lbs hamburger
salt and pepper to tatse
2-3 T. brown sugar(I usually add more)
1/4 onion, chopped
1 can tomato soup,undiluted
1 can cream of chicken soup
16 oz.package egg noodles
1/2-3/4 C milk(use your judgement)
8oz package grated cheese:whatever your preference

Preheat oven 350 degrees.
Cook noodles and drain. Add to cream of chicken soup and milk.
In seperate pan,Brown hamburger w/salt, pepper,brown sugar and onion. Do not drain.Add tomato soup. Spray large casserole dish w/cooking spray. Place a layer of noodles,layer of hamburger mixture.Sprinkle w/cheese. Repeat layering.Cover casserole and bake 30 minutes.

OUCH!! I fell in a place where it took me 10 minutes to get somebody's attention and they didn't believe me when I said I broke it. Mine is in a splint until after the surgery.

I love to read but can't find a comfortable position to read in...except on the potty....lol

I guess I'll stop feeling sorry for myself now! I'm unemployed and having trouble with my ankle (old achilles tendon injury acting up) but it's not broken!

I have teens as well and think this sounds like a great opportunity for yours to practice their cooking skills. My teens keep it pretty easy, but they're pretty good at managing things like spaghetti, sloppy joes, taco soup (the kind with all the cans,taco seasoning and ranch dressing mix)etc. Maybe when they get home you can sit them down to come up with a list of meals they could make. That way you can make up a grocery list and your dh or a helpful friend could pick up the stuff.

Sorry to hear you're laid up. Here are two of my family's favorites:

WICKED CHICKEN

1 box or can of prepared stuffing mix
1 package frozen peas
2 small cans of mushrooms
1 can cream of chicken soup
2/3 soup can of milk
3 cups cooked chunked chicken. (package of 3 half breasts)


Grease a 2 qt casserole. Layer dry stuffing mix in the bottom, just enough to cover the bottom of the casserole. Layer in one package of defrosted peas mushrooms and chicken (I use a small package of boneless skinless chicken breasts – 3 half breasts. I cut them into bite size pieces and stir fry them). Mix a can of cream of chicken soup with 2/3 soup can of milk and pour over the top. Make stuffing mix according to the directions (either the rest of a box or if you use a big can – 6 servings). Bake at 350° for 30 minutes.

I’ve used leftover turkey in place of the chicken and either cream of mushroom or cream of celery soup and it still came out good. I’ve also used other vegetables but my family likes the peas the best.


MEXICAN SHEPARDS PIE

1.5 lbs ground beef
1.5 cups shredded cheese
1 package taco seasoning.
1 package corn (defrosted)
Mashed potatoes (if using instant make enough for 6 servings. If making your own I use 5-6 medium size potatoes).

Brown ground beef and drain. Add taco seasoning and enough water to “dissolve” it in the ground beef. Layer in the bottom of a 2 qt casserole. Layer in cheese, corn and mashed potatoes. Bake at 350° for 30 minutes.

glad you liked it :) you might also consider manwiches with instant mashed potatoes, peas or green beans and possibly salad. one of those chicken pot pies you make from a boxed kit would be good too-add a salad and you've got dinner. a take-n-bake pizza from wal-mart with salad would make a good meal. can you tell i'm craving salad? LOL in all seriousness, anything can be dinner, as long as your family likes it. pancakes and scrambled eggs would be great, and kids love to make pancakes (or mine does, anyway).

Upside down night (breakfast for supper) is one of our favorite meals.:goodvibes

I do have a question though: Why is it that most easy meals to make are made with hamburger?
 
Sorry to hear about your accident! Here's one we like -- you can easily adjust for the size of your family.

1 can potato & bacon soup per adult (or 1 per 2 kids)
1 pkg frozen salad shrimp for each 2 cans of soup (not necessary to thaw)
1 can corn (pour off water) for each 2 cans of soup
1 strip cooked bacon for each can of soup

Cook all together. When soup is done, put shredded cheddar cheese on top. Enjoy!

Do you have an appt. yet??? Today is the last day I can take ibuprofin along with the good drugs.....my favorite part so far is going to the restroom:scared1:

That Wicked Chicken recipe looks really good, I'm gonna have to try that...

Last Saturday, my DDs and I made up some really good Quesadillas... We put in shredded chicken, cheddar cheese, bacon-crispy and crumbled, a bit of crushed pineapple and a drizzle of Barbeque sauce. (Hard Rock Cafe has quesadillas like this...this was just our copy of theirs) I bought a rotisserie chicken breast to make it even easier! They were great!
