I would guess May, as most people would still be in school.. There are webpages out there that can give breakdowns as to how busy the parks generally are. I don't really know what they are as both trips of mine have been 'go this week or not at all' !!!
The CROWDS in July can be horrible (esp. around the 4th) but the real problem is the HEAT!!!!! That is one trip I will NEVER make again. Go for May! Even if it is more crowded, at least you are not likely to suffer heat stroke!
(PS-Heat doesn't normally get to me either but stifling heat in stifling crowds is not a pretty picture!!!)
I'm from So. Florida too and you will RARELY see me in the parks in July! The heat in Orlando in July is oppressive, with very little breeze, and talk about HUMID! Then, there are the bugs.... Trust me, May will be a more enjoyable time to go.
We've been in mid-late May and our last trip was July 5-12. It was SO CROWDED and the heat and humidity was oppressive. I live in Alabama, so I'm no stranger to heat and humidity.....but being outside all day in it, with 50,000 of your closest friends ?!? I would definitely go in May.
