Help with park days for 1st trip in forever!!

Hi, all! I am a DLR vet gearing up for our first family trip to WDW since having kids, and my first trip back to the World in almost 15 years / my husband's first time back since childhood!! Everything is going to be so new, and I couldn't be more excited. Since we're there for a limited time, and spending a boatload of $$ LOL, I want to make sure to plan the week as close to perfect as I possibly can, and I would be SO grateful for your expert insight on which days/which park, plus any other tips! The group is: me (30s), DH (40s), my 5-year-old son, 1-year-old daughter (we're celebrating her 1st bday on the trip!), my brother and his wife (both 40) and my 3-year-old niece, who will be attending her first-ever Disney park on this trip! So far the plan is:

SUNDAY, NOVEMBER 6: Drive to Orlando from Miami, where we'll be coming from a wedding, and check-in to our first hotel: Waldorf-Astoria Orlando. Hoping to get in early enough to check out the pool and have a nice dinner at the Waldorf, or maybe DS?

MONDAY, NOVEMBER 7: My brother and his family's arrival day- their flight gets in at 11 AM, so they will likely not do a park and just meet up with us later. We want to save MK to do for the first time all together, and probably Galaxy's Edge too, so I'm thinking maybe Epcot for our first park day?

TUESDAY, NOVEMBER 8: MK

WEDNESDAY, NOVEMBER 9: Resort switch day, moving to the Polynesian! On one hand, probably makes sense to save MK for when we're on the Monorail. But then we'll be there the next day for MVMCP, so I thought it might be nice to have a different park in between. Plus I think MK would be the best intro to a Disney park for my 3-year-old niece. So in thinking about it, maybe we stick with MK on Tuesday, hold our bags at the Waldorf and go to HS, then switch to the Poly after the park?

THURSDAY, NOVEMBER 10: Resort fun at the Polynesian during the day, and arrive at MK at 4 PM for MVMCP. My brother and his family are staying at an Airbnb, but will they be able to come hang out at the Poly pool with us?

FRIDAY, NOVEMBER 11: Epcot

SATURDAY, NOVEMBER 12: Our flight back to LA isn't until 5:30, so we could either add another park half-day, or check out DS or hang at the Polynesian. What would you recommend?

I haven't included AK here because we have two big zoos near us, the LA Zoo and San Diego, and I wasn't sure it was worth taking away from time at the other 3 parks where there's so much we want to see/do. What do you think? Also, I know this is Veteran's Week and Jersey Week, so I'd be extra grateful for your thoughts on if I picked the right parks/day for minimizing crowds?
