I need some help. I try to pack my lunch every day for work. Sometimes I do, more often I don't. I am looking for some ideas for lunches i can make ahead on Sunday and freeze or will store nicely. I have a freezer/refrigerator and microwave at work. For my breakfast I am making some egg and sausage burritos that I make and freeze and then i can put them in the microwave for 2 minutes and they are amazing. For some reason lunch is stumping me....

Here are some easy ones:

Lasagna
Chili
Chicken, broccoli and rice casserole
Mac and Cheese
Soup (bean soups aren't so likely to leak, so they're a good choice)
Meatloaf
Stew
pork roast
empanadas
pizza
couscous or tabouli
Enchiladas (chicken, pork, beef, whatever)
Burritos

For other inspirations, you can check out the Lean cuisine website. They've got all kinds of things listed that could be easy for a home cook.

One thing I might suggest is doing one month at a time. For example, you could do 4 or 5 different simple chicken dishes. Just cut it all up at once, cook it all at once and then divide into chicken and rice, chicken lo-mein, chicken with couscous, chicken enchiladas and chicken stew. It wouldn't take much longer and you would eat something different every day.
