Our trip to Disney is 3 weeks away!

But I am already thinking about next year's trip as my eldest will be starting kindergarten, and I don't want him to miss [much] school.

Looking at the calendar here are options:
Presidents day - Feb 17 - 21 (2017) (though 20 and 21 may have school pending snow days)
Spring Break - April 13-18 (2017)
Early summer break - Mid June - late June (2017)
Thanksgiving - Nov 22-26 (2017)

I don't want to even think about Christmas crowds.

Spring break is short in 2017 (2016 get a full week off).

We have gone during spring break before, and the crowds were manageable for us.

I have never been to Disney when Christmas decorations have been up, so that would be neat to see, but not sure on Thanksgiving crowds?

I have been most of the times you list. Spring break at Easter is miserable to me. Thanksgiving is pretty busy, but other than the 4 day weekend can be manageable. However I voted for early summer. We've been the 3rd week of June and it wasn't too bad at all. I have never been President's day so can't comment on that.

Wouldn't worry about missing school, if only K-5. Avatarland is supposed to open sometime in 2017. The later you can wait, the better your chances of experiencing most of it. The later you wait, the more crowded it will be as well. To us, Avatarland means absolutely nothing, so Presidents day would be the most ideal by far. You may get lucky and see part of Avatarland at that time as well.
 

we went presidents weekend a couple years ago and it was fine.

I'm glad to hear this! We are going February 2017 from the 18th - 26th. It's my nieces early graduation present and she has the whole week off. Around here (Northern California) it's called Ski Week!
 
We have 2 kids in school, one in junior high and the other in elementary. Last year we decided to let them miss a week of school and went the week before Thanksgiving. I'm sure there were slower weeks but it was great . Not too hot, only 1 day of rain and not very crowded. We enjoyed it so much that we've decided again to let the kids miss a week of school this year. Now just debating on going the same week as last year or going a few weeks earlier and hitting up the last week of October to see MNSSHP.
