HELP!!!!! Veggie ideas....

Well I have been doing WW for awhile and really like it!!!! But I know I need to balance my meals out better!!! I have been doing really well with eating more meats and less carbs. It used to be I could eat carbs and nothing else and be perfectly happy. I am even getting better at getting my dairy in but still have problems with the veggies. THe problem being that I don't like a lot of veggies. So this is my question how do I get in the veggies?? How many different veggies can everyone name?? I know I have actually tried very few of what is really out there!! Actually It is not that I don't like veggies I just don't like them cooked!! I like them raw some I can do steamed as long as they are crunchy!!! So let me have all your great ideas!!! And how many veggies are there anyway??
 
There are lots of veggies. My favorites, in no particular order, are:

artichokes, asparagus, brocolli, brussel sprouts, cabbage, celery, used to eat lots of raw carrots, they aren't worth it to me anymore. Oooh, <i>love</i> tomatoes. Eggplant, especially with mozarella cheese and spaghetti sauce. Love spaghettic squash and yellow squash and zuchinni.

Oh, and AVOCADOS, <i>love</i> avocados :) and cucumbers.

I will eat green beans but they are so bland. Love sauteed onions(have to be careful with them, though..pretty high carb for a vegetable). Green peppers and mushrooms.

Was this a disorganized enough reply, do you think? LOL, just thinking aloud here :teeth:

broccoli, cauliflower, celery, cabbage (green, red, savoy, chinese), lettuce, rutabaga, spagetti squash, summer squash, zucchini, green beans, wax beans, asparagus, mung beans sprouts, bamboo shoots, beets, cucumber, radish, endive, kohlrabi, leeks, mushrooms, green peppers, red peppers (higher carbs than green though), pickles, olives, spinach........most all of the above are relatively low in carbs according to the USDA ingredients list.
 
sugar snap peas
any stir fry frozen mix
yellow squash, zuchinni, and mushrooms grilled or lightly sauteed
tomatoes
canned tomatoes with seasonings


do you like chinese? I bought a wasabi that is 1 pt per TBSP and I stir fry veggies with it and it's very good.

others that enter in my eating plan are:
asparagus, cabbage, peas, carrots, celery, salad (lettuce, mushrooms, red pepper, cukes) corn, eggplant, broccoli,

hmmmmmmm.....................

make one dish meals that hide your veggies :) just and idea
 

Thanks everyone!! Anyone else??? I think I am going to sit down and figure out meal combinations of things we have in the house so that I can get all the appropriate % of stuff in daily. This is one thing I have yet to do and think it is time.
 
Try jicama (great raw with a little lime juice and salt!), or sauteed radishes, or chayote squash, or turnips... baby spinach salad with a hot bacon dressing, or wilted lettuce... try wrapping your sandwich fixings in a romaine or bibb lettuce leaf, instead of putting them on bread.

Pea Pods
Avacados

Eggplant...I used to love this fried, but I tried it the way Kath said with cheese and it was yummy!

Yellow Squash
Zucchini
carrots
and my most favorite veggie, Wax Beans!! Yum!
