Help! Team Dinner?? Food Allergies

I have to make a dinner for my daughter's softball team. 19 people all together (coaches, scorekeepers & players). We have a few vegetarians and we have allergies to Peanuts, Pork, Milk, Eggs, Shrimp, & Sesame. The coaches said no dairy and they would prefer something healthy. Examples given were pasta with chicken and sub sandwiches.

I cannot think of a main dish. Last year I brought 2 main dishes (both were pasta -1 with me and 1 without) , bread, veggies with dip and fruit. But this year with the food allergies I am lost.

So any suggestions??

Why not get a bunch of lunch meats, vegetables, and cheeses (keep them separate), bread, etc., and do a create your own sandwich?
 
Honestly with that many requirements I would tell the coach to give the recipes of what I should make.

Otherwise I would go vegan and do vegan lasagna, salad, etc.
 
I second the create your own sub idea. Its just easier that way when you have to deal with all of those restrictions.
 

Vegetarian Sloppy Joes, Gumbo, Goulash, grilled chicken strips and lots of veggie options...for dessert I'd just do some sort of fruit dish - like mixed berries.

I don't think the restrictions are that bad - just looking at them, you can
serve beef or chicken and there are lots of ways to prepare either that don't involve eggs or milk (and I'd leave out eggs and milk anyway if I was trying to prepare them in a healthy fashion). A lot of vegetarian meat substitutes lead themselves well to taco filling.

What have others fixed in the past?
 
I second the create your own sub idea. Its just easier that way when you have to deal with all of those restrictions.

Here is my issue with the "sub". They wanted "healthy" and no way in hell is lunchmeat healthy.

It is processed meat with sodium nitrite. Not good for you.
 
I would do spaghetti with a red sauce with no meat or tacos.

For tacos have black beans and or fat free refried beans for the vegetarians (make sure the refried beans don't have animal products added). Have lettuce, tomato, olives, onions, salsa, cheese etc on the side so everyone can make their own. They can do a salad or they can use tortillas or shells.

Spaghetti you can have a big salad and some garlic bread (light on the butter if you think that isn't healthy).

With those restrictions beggars can't be choosers. I wouldn't worry about doing anything fancy or that takes a huge amount of effort.

I would start with a big tossed salad, various dressings on the side. Bread and butter, cut up fruit and maybe a fruit dip. Then I'd add a pasta dish (ziti with red sauce), parm cheese on the side, meatballs on the side.

Or maybe two chilis: one with meat, one without. In that case, I'd make cornbread, too. Salad, fruit, veggies and dip, ,maybe rice.


Otherwise, cold cut platters to make your own sandwiches, some kind of pot of soup (veggie), chips, fruit, bread, crackers, cheese , pepperoni, maybe a macaroni salad or potato salad and the tossed salad.
 
Well I was going to do what I did last year and that was Fettuccine Alfredo Pasta and a Tomato Basil Penne with hamburger Pasta dish. But both of those contain milk or eggs. I don't mind doing one dish vegetarian and one dish with meat. Mostly I am worried about the milk and egg because everything has that in it.

My friend said Chipotle but that is too expensive for 20 people.
 
Chicken and Beef Fajitas with rice and a salad. For the vegetarians a pasta dish with veggies.

Thats a large request of you! Tell them to pick the menu and you'll cook it! Sheesh where the heck did all these allergies pop up from.
 
Chicken taco salad is my standard for a larger group. I put any amount of boneless chicken in a crock-pot and add a jar of salsa and a package of taco seasoning. Cook a long time and it will shred itself when you stir it.

Set out Tortilla chips and all the fixings (lettuce, tomatoes, cheese, sour cream, salsa, etc) and let them build their own chicken taco salads to their taste/allergy preference.

Doesn't most sub sandwich bread contain milk and or eggs?

I'd go with the taco or potato bar. Figuring out 1-2 dishes with all those restrictions could prove to be difficult.

My second choice would be the spaghetti made with a red sauce - ground beef on the side along with a salad with a simple vinegarette (oil, vinegar, salt and pepper) and bread.
Sourdough to the best of my knowledge does not contain milk or eggs so perhaps that would be a good all around bread choice.
 
How about a chili bar?

Have meat chili and meatless chili.

Put out the usual "fixins" and people can pick and choose (cheese, chips, sour cream, guacamole, rice, elbow macaroni, and whatever else you can think of to put on top that can sit on the chili bar). Make a salad on the side.

For my daughter's swim team we usually do a big tray of mostaccioli with marinara (Love Trader Joe's cause its dairy free!). I do a crock pot with meatballs and parmesan on the side. Also a big green salad with a choice of dressings (Italian is often dairy free). Fruit salad is also a huge hit!

For drinks we had lemonade, water bottles and gatorade.
 
I'd do spaghetti with red sauce and meatballs on the side. Or the taco bar sounds good too - just make sure there are some vegetarian options like roasted veggies or avocadoes (avocado and cheese makes for a really good soft taco!)
 
I am liking the taco idea. I think I might do that. Have some meat, rice, lettuce, tomatoes, and cheese. Just let them fix it. Plus a big salad and fruit.

I told the coach each girl should just bring their own food. But she was going on and on about how team dinners before the game was a bonding experience and it is better if they are all eating kinda the same..

I am so lucky with my family that we do not have any food allergies only bee/wasp allergy...

Everyone suggesting pasta...

I looked and all the pastas in my pantry said "may contain traces of eggs". If there is an egg allergy that might be an issue.
