I totally forgot that I have Bunco group tonight!! Everyone brings a snack to share and I have no idea what to take!!!!! It starts in 90 minutes....anybody have any ideas.....?

I live within 5 minutes of a grocery store, but I don't know what to put together. These other ladies (all SAHM's) usually bring these elaborate dishes and I always feel stupid bringing chips and dip.

Does anybody have an idea for something to throw together that won't look thrown together?

Thanks in advance!!

How to Make Ortega® 7-Layer Bean Dip

--------------------------------------------------------------------------------

Here's a hearty dip that can be prepared in advance and served on any occasion. From the Ortega recipe collection, this dip serves 10 to 12.

Ingredients:
1 c. (4 oz.) Mexican Monterey Jack blend
1 c. sour cream
1 package (1 1/4 oz.) taco seasoning
1 c. chunky salsa
1/3 c. (2 large) sliced green onions
tortilla chips
1/2 c. (4-oz. can) diced green chilies
1 c. (8-oz. container) refrigerated guacamole
1 3/4 c. (1-lb. can) refried beans

Steps:
1. Combine beans and seasoning mix in a small bowl.

2. Spread bean mixture in an 8-inch-square baking dish.

3. Top with separate layers of sour cream, guacamole, cheese, salsa, chiles and green onions.

4. Serve with chips.

Nacho Layer Dip

1 cup leftover chili or canned refried beans
8 ounces cream cheese, softened
1 cup chopped tomato
1/2 cup coarsely chopped jalapenos
1/2 cup finely chopped red onion
1 cup shredded cheddar cheese
1/2 cup sliced scallions

Preheat oven to 375 degrees F.
Spread chili or beans over bottom of baking dish. Spread softened cream cheese on top. Layer tomatoes, jalapenos, red onion and cheese. Bake for 20 minutes or until bubbly. Top with scallions and serve with chips

You could prep it at home and bake it when you get to Bunco. Put the cream cheese in the microwave for 20-30 sec to soften.

Have fun.

Do you do sweet treats too?

An easy one that looks great:

layer the bottom of a pyrex or corning baking dish w/pie filler (any fruit flavor....my kids like apple or peach), then sprinkle WHITE cake mix over the top of it just to cover (about half the box), then drizzle w/melted butter or margarine....stick it all in the oven at 350 for about 10-15 minutes...and you have a great cobbler!

How about homemade hummus and pita chips? It's sooo easy to make and much better than store-bought.

Mom's hummus recipe:
2 cans garbanzo beans (1 drained and 1 with liquid)
2 lemons
garlic (I use alot, but use as much or little as you like)
2 tablespoons tahini
olive oil
salt to taste

Combine beans, liquid, juice of both lemons (and some of the zest if you like it lemony) and garlic in food processor and mix until beans are coarsely chopped. Add tahini and process until everything is mixed together. Stream in olive oil, while mixing on high speed, until it gets to your desired consistency. Add salt to taste. Serve in a bowl with a drizzle of olive oil on top. Another good garnish is some kalamata olives.

Pita chips:
Cut pita bread into wedges and toss with olive oil, salt and oregano. Spread on a baking sheet and bake at 350 degrees until crunchy and lightly browned.

Have fun!
