Can I book a room today online and then add the free dining on Thursday?

Yep. I booked a room only ressie about 2 weeks ago and am waiting, patiently, for any codes/discounts that might hit my weekend. I can't change due to a quick school holiday, but I would recommend booking at least your room so you can get where you want to be.
