Help planning weekend trip please! Princess, Star Wars, halloween

Weekend trip planned for the weekend of September 30/October 1 for my daughters 5th. (Also bringing husband and 1 yo son)
Here is what we have so far and looking for ideas/suggestions!

9/30 - headed to MK early to hit up as much fantasyland as possible which worked very well for us last time we went. Have a fp at 10:30 for splash mountain.

11:50 reservation at chef mickeys, followed by some rest/downtime for the kids.

Belle 2:40
Seven dwarfs 3:40
Whatever else we can get
Bibbidi boutique for daughter at 6:10

My preference would be to get the fp in the late morning but SD and Belle were already not available and I didn't want to get a Belle at 9am and waste that time.

After daughters BBB we will have to either do boo to you party (not sure if this is worth the $$ for little ones after such a long day already), or go home and get an early-ish night. We would also consider heading to HS for the Star Wars dessert party if they were having it this night but not sure if they will??!?

10/1 Saturday
HS - get there at opening for Jedi training reservations and possibly toy story. We have no fast passes for HS. We have a brown derby lunch but not sure if we will keep it. Would also consider early breakfast reservation, or other ideas to increase odds of fitting in toy story and Jedi training.

Epcot evening - I know, it will be crazy busy but we have a frozen ride FP around 4 and Akershus dinner reservation. Haven't been to Epcot as an adult.

Sunday we do leave late enough to hit up a park but we may also hang at the resort pool after two busy days.

Does anyone have ideas or suggestions about this itinerary? We want to pack as much as we can reasonably into one weekend keeping in mind my kids will be 1 and 5 and are limited in what they can handle.

We did most rides at MK last year so if we missed some of the favorites it wouldn't be the end of the world but we do want my daughter to have one more princess experience before we come back next when my son is old enough for the rides in 3-4 years, when I assume she won't be as interested. My husband also wants to experience some of the Star Wars stuff with her.

Unfortunately can't make AK this time which is my favorite!

I wouldn't be happy with spending so much time on such a short trip with ADRs and breaks. But then it's been a long time since I travelled with kids that little.

I would be very tempted to hit up a park the morning you leave.

You are correct that a Saturday evening at Epcot during F/W will be very busy. Stay flexible.

One thing to keep an eye on is what happens with the Magic Kingdom anniversary. I believe it's 45 years old on 10/1. The MK was overrun on the 40th anniversary, so resist the temptation to swap and do MK on Saturday instead.
 
The only thing I'm thinking about a late BBB and calling it a day, your dd won't have time to show it off. But adding MNSSHP to that day would make it so long for the kids.

i agree on the late BBB, unfortunately that was the only time I could get months ago.

On the adr, also agreeing. The only one of those we will definitely keep is akershus. The rest I could take or leave and maybe should plan on leaving!!

I'm not sure about the rest time. My daughter could probably go without but if we do a late night it would be good. My son could maybe sleep in the stroller or carrier.
 

Just be aware that if you plan to cancel any ADRs you need to do so the night before to avoid no show fees.
