If budget allows, there is an offer for club level. Beach club/yacht club are available with discount that week. Might be easiest--book, then call the IPO for help with ADR's. Your boss will need to be flexible at this late date with resort and dining.

As far as dining, you can can also check and book ADR's online.
What is their plan for flights? Have you found some that fit their schedule and budget?
The one thing I would not do is use an email TA. The time is to short to play email tag.
