Help newbie here.

You may not get all of the reservations you want as you picked some of the hardest but I assure you there are plenty of other great places to eat at WDW and you "actually will be able to eat anywhere nice". I have been looking for sci fi for a few months for our trip next month and only late ones have come up and we aren't willing to miss the fireworks for it but we do enjoy trying new places each trip and have actually been surprised by some restaurants. Example: the plaza is our absolute favorite meal for lunch. And we've ate at CRT, BOG, Ohana, etc. We don't have it in the plans this time for the first time ever and it is kinda making me sad but we want to try some new places. Look at menus and look for food options you like... I bet you'll end up loving something even if it isn't the one that is mentioned the most on these boards.

Counter Service other than BOG don't need advanced booking but for table service it's highly recommended. You can put your dates into the MDE and see what's left.

Last year we planned a trip on a whim five days before we left. I was able to get a PPO Akershus reservation about 2 days before and our other reservations we made as we were starting to get hungry the day of. Those included Yak and Yeti, the Plaza, and San Angel. Lots of options will open up the week up until the night before as people finalize plans.
 
I agree with reserving a second choice just to have your plan in place. That being said I can almost with 99% confidence believe you will get your dinning wishes with Touring Plans. We are going early September and although I made reservations at 180 days prior I didnt look for BOG, Ohana, 1900 Park Fare for dinner or Bon Voyage breakfast until recently and Touring Plans found them all and at exact times I wanted. Its amazing. However be ready on the trigger. Phone charged, volume up and wifi connected. I missed a text by just moments and didnt get it. Luckily days later I got it and that was Ohana dinner for fireworks timming! Have an amazing vacation and know it will work out. Are you familiar with fast pass? Dont sweat that either. I stressed about that for months but that was pretty smooth as well.
 
Sci Fi, a lot of folks rave about it, me, not so much. Here is why, food is just ok IMO. And if you have more than 2 people, you aren't really setting together. You are in a car, 2 in front, 2 in back. The movie is cool, but after a while, its the same ol loop. Here is my alternative...50s PTC. Food is tasty, antics are fun and the place just has a cool 50s vibe.

I agree. With Sci-Fi you are stuck with who you are sitting next to, and I've always felt like you couldn't talk in there. it's pretty quiet. I LOVE 50's Prime Time. Food is good, it's a lively atmosphere, loads of good conversation starters with the decor...I just loved it. The films at SciFi were nothing to speak about and they definitely didn't grab my attention.

Last year we got a table at Trails End at the Wilderness Campground without a reservation. If you like ribs, chicken and BBQ stuff, it's a great place to eat. I would suggest to try non-common times for lunch or dinner or go when they open and ask. And there are a lot of real good QS Option also.
 
2 summers ago I managed to book a Brown Derby dinner 1 hour from when I was looking for an ADR (so same night) for 10 people. I also booked an ADR for lunch for 11 people in the morning, same day at crystal Palace. This was in July. People cancel all of the time. Good luck!
 
Keep looking and you'll find what you want almost anywhere. I've planned VERY last minute and other than never being able to get V&A Chef's table (not that I"m bitter), you can get anything if you just keep looking. Have a wonderful first trip!
