Based on some friends experience this week you had better start looking for those airline tickets NOW. Of course the week you are talking about may fall outside the holiday period so maybe you will be lucky. We are flying SW in two weeks and I started out at $334 a ticket for non stop flights. By watching the web site I was able to finally end up with $240 per person. This is the only airline that doesn't charge a fee if you change flights unless the one changed to is more expensive and you have to pay the difference. For rooms try Hotelkingdom.com - these same people got 2 or three bedroom units within a couple of miles of Disney in the $88-$124 range. One of the places also has a breakfast included. These did not require a timeshare presentation. There were rates in the $30 range but you have to attend a time share thing. There are also some very low end resorts listed so you might want to ask for reviews from people who might have used some of them before you actually book anything.
For discounts on passes try one of the ticket brokers - ticket mania, orlando tickets or one of the things like hotwire savings club or Connections ( just join for the trial if you want to and then cancel after you get your tickets).
