HELP!! Need Hawaiian/Tropical snacks to serve at party...

I know we are moving out of this season but I am giving summer one last hurrah... Any recipes would be greatly appreciated...

I have a cookbook called Cooking with Mickey & Friends.
It is a cookbook for kids, but it has a recipe for Rafiki's(from Lion King) Coconut Fruit Kabobs.
Ingredients:
One 8oz. can pineapple chunks, packed in juice
1 medium banana, peeled
1 medium apple
1/4 cup orange juice
1/4 cup shredded coconut

Open can of pineapple chunks. Pour the pineapple chunks and juice into a medium bowl.

Slice the banana into 1-inch pieces. Add to the bowl.

Use an apple corer to remove the core from the apple. Cut the apple into 1-inch cubes. Add to the bowl.

Pour the orange juice over the fruit and stir to blend.

Put the fruit on a skewer, alternating the chunks of pineapple, banana, and apple. Fill up each skewer with an equal amount of fruit.

Pour half the coconut onto a plate. Place the skewers on top. Sprinkle remaining coconut over fruit. Gently press the coconut to coat the fruit on all sides. Makes 2

Other fruit possibilities: cantaloupe,strawberries,pears,grapes,nectarines,
kiwi,papaya,watermelon,peaches.
 
Also from same cookbook: Jasmine's Fruitie Smoothie
Ingredients:
1 medium, very ripe banana, peeled
1 cup fresh strawberries
1 cup nonfat plain yogurt or lowfat milk
1/4 teaspoon vanilla(optional)
2 ice cubes

Break the banana into 3 or 4 pieces, and place in a blender container.

Rinse the strawberries, and pull off the stems. Put them in the container.

Add the rest fo the ingredients. Put the lid on the blender.

Blend for abouut 30 seconds, or until smooth and creamy.

Pour and serve. Makes 4(about 1 cup each).

Try other fruits like: Kiwi,pineapple,melon, or peaches.

If this is for kids, I always think of Crisp Rice Cereal Sushi! (Adults at our house really like it, though!)
 
These are excellent ideas!!! This is actually for a Home and Garden Party for adults :) The kids will be partaking in the food also though...
What exactly in Rice Crispy Sushi? That sounds interesting...
 
Hi, I always like to take the easiest way possilbe, if you have a Sam's club or costco near you they have coconut shrimp which is very good, I would also go with lots of fresh fruit, I hear alot of people on these boards taling about the pineapple with caramel sauce? served at ohana in the polnesian? Maybe some kind of grilled fish and salad with macadamia nuts? well just some thoughts! Have a great party!!!.........goof
 
CRISP RICE CEREAL SUSHI
from the California Grill, Contemporary

8 fruit roll-ups
¼ c butter
10 oz miniature marshmallows
6 c Rice Crispies
16 Gummi worms or
24 Swedish fish
Unroll fruit & place plastic down on cutting board. Melt butter; add marshmallows, stirring until melted. Remove from heat; stir in cereal until blended. Spread ~½ cup cereal mixture quickly over each fruit roll, leaving a 1” border on 1 long side. Put 2 worms or 3 fish lengthwise down center. Begin rolling on side w/o border. Press to seal. Cut into 4 slices. Repeat with remaining ingredients. Serve with chopsticks, if desired. Yield: 32 rolls.

[NOTE: Try to get fruit roll-ups without those cut-out shapes or the ones that say "flavor strip" - as they are semi-perforated, which makes it difficult to roll them up without splitting.]

Another good one is:
Pineapple Icee Whip
a Great Pretender for Dole Whips

Freeze: 3 hrs.
Makes: 8 servings

2 cans DOLE Crushed Pineapple (20 oz. each)
2 Tbl lemon juice
2 Tbl lime juice
1/3 c sugar
½ c chopped maraschino cherries, mini marshmallow or mini chocolate chips, (optional)
1½ c heavy whipping cream, whipped


Drain pineapple; reserve 2 tablespoons juice. Set aside. Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender or food processor container. Cover; blend until smooth. Stir in cherries or marshmallow or chips, if desired. Pour into two 1-quart freezer zipped bags. Store bags flat in freezer. Freeze about 1-1/2 hours or until slushy. Stir gently pineapple slush into whipped cream until just blended, in large bowl. Return to freezer until completely frozen, about 1 hour. Serve.
 
Tropical Fruit Caesar Salad
from the Maya Grill, Coronado Springs

Serves 6

For the fruit salad-
1 mango
1 papaya
1/2 pineapple
1 star fruit
1 cup strawberries
2 kiwifruit

For the garnish-
1 cup coconut flakes
1 8-ounce pound cake
Zest of 1 lemon
1/3 cup unsalted butter
1 tablespoon mint leaves, finely chopped

For the dressing-
1 1/4 cups chopped white chocolate
Zest of 2 oranges
Juice of 2 oranges
1 1/4 cups heavy cream, room temperature
1/8 teaspoon vanilla
1 teaspoon poppy seeds

Preheat oven to 350 degrees. Cut all the fruit into medium-size pieces and mix in a large bowl. Refrigerate until needed.
Place coconut flakes on an ungreased baking sheet and toast in the oven, stirring twice, until golden brown (4 to 8 minutes). Remove from the oven and set aside to cool. Leave oven at 350 degrees.

To make croutons, cut the pound cake into 1/2-inch cubes. Place lemon zest and butter in a medium saucepan and cook over low heat until butter melts; remove from heat. Add cake cubes and stir until well-coated. Place croutons on an ungreased baking sheet and bake, stirring twice, until golden brown (12 to 15 minutes). Sprinkle with mint and set aside.
Melt the white chocolate in a double boiler or microwave. Add the remaining ingredients and stir until thoroughly mixed. Let cool to room temperature.

When cooled, add the dressing to the salad 1/2 cup at a time and toss, until you have the desired amount. Portion fruit salad onto 6 plates. Garnish each plate with 4 or 5 croutons, then sprinkle with toasted coconut flakes and serve.
